Today is National Chocolate Covered Cherry Day which celebrates a sweet holiday classic, chocolate covered cherries.
Chocolate covered cherries are a delicious candy that can be enjoyed year round, but they are especially popular during the holiday months.
They can be made in a variety of ways . A popular variety is a cherry cordial, which is often filled with a cherry liqueur filling . Other varieties include the simple and traditional cherry dipped in chocolate. Whatever variety your fancy, support your local store and order some chocolate covered cherries.

I know I just shared these pictures on Chocolate Candy day which was not long a go, But here they are again.. They are a favorite chocolate candy of mine. My mom used to always give me a box for Christmas and it’s become a tradition for me to have a box here during the holidays. My daughter also got me a box of them for Christmas that were made by our local Chocolatier .
It’s Monday once again and time for me to cook up something new for the week and on the menu is:
Cabbage Roll Casserole
Makes 8 servings
3 Tbsp. olive oil, divided
1 lb lean ground beef
1 cup chopped onion
3 cloves garlic, minced
2 cups beef broth
1 15 oz. can tomato sauce
1 cup long grain white rice
1/2 tsp. salt divided
1/2 tsp. ground pepper, divided
8 cups chopped green cabbage
2 tsp. dried dill
1/4 tsp crushed red pepper
1/2 cups shredded Cheddar cheese
Preheat oven to 350 degrees . Lightly coat a baking dish with cooking spray
Heat 2 tbsp. oil in a large sauce pan over medium heat. Add ground beef and onion; cook, stirring until the beef is no longer pink. Add garlic and cook until fragrant. Stir in broth, tomato sauce, rice, 1/4 tsp salt and 1/4 tsp pepper. Bring to a simmer. Cover, reduce heat to maintain a simmer and cook, stirring once or twice, until the rice is tender. Uncover and remove from heat.
Spread half of cabbage in the bottom of the baking dish. Top with half the beef mixture then half the cheese. Repeat with the remaining cabbage, beef mixture and cheese. Bake until cheese has melted and started to brown. about 25 minutes.
I have to go in for lab work tomorrow for a coming appointment with my kidney specialist. Thankfully the weather is cooperating, and while it is still chilly it will be somewhat warmer and the skies are clear.

My former hubby and I always made several pans-full of cabbage rolls each New Years Eve (in preparation for the next day's open house). Only Ron made his using pork sausage.
Funniest memory ever: One of his best friends was an older Jewish gentleman who arrived with his wife. Not long after, the wife began toying with her fork: "Does this contain pork?" To which Reuben replied, "Shut up, Lil, and just EAT the d*** the cabbage roll."
