Today is Bittersweet Chocolate Day which honors a chocolate that is a sweetened form of dark chocolate made with cocoa liquor, sugar, cocoa butter, and vanilla. Unlike milk chocolate or white chocolate, it does not contain any milk solids. According to FDA standards, bittersweet chocolate must contain at least 35 percent chocolate liquor, a non alcoholic liquid produced from cocoa beans.
Consuming bittersweet chocolate on a daily basis is actually quite good for you. All variations of dark chocolate contain antioxidants that lower blood pressure and help protect your heart. Other heart healthy food include green tea and blueberries.
In honor of the day, treat yourself to a few pieces of your favorite variety.

I am a chocolate lover and if I have a choice I’ll choose dark chocolate, it is good and good for us too. So I will definitely be celebrating today.
I always cook up something new for the week on Mondays and on the menu for today is:
Makeover Tater Topped Casserole
Makes 8 servings
1 lb. lean ground beef
1/2 lb lean ground turkey
1 pkg, 16 oz., frozen mixed vegetables
3/4 cup french fried onions
1 can condensed cream of celery soup, undiluted
1 can condensed cream of chicken soup
1/2 cup milk
4 cups Tater Tots, thawed
In a large skillet cook beef and turkey over medium heat until no longer pink. In a baking dish coated with cooking spray, layer meat mixture , vegetables and french fried onions.
In a small bowl, combine soups and milk, spread over onions. Top with tater tots. Bake uncovered at 350 degrees until golden brown. About 50 minutes.
I’m halving this recipe since it makes so much. I used ground chicken instead of the turkey and beef. It’s what I have on hand here.
And of course I’ll be having some dark chocolate candy for dessert.
After a slightly warmer weekend, we are to be back in the 20’s today until Wednesday when we warm up to the 30’s again. Brrchill. I certainly am glad it won’t last long. I do have to go out today for my regular check up with my primary care doctor so I’ll definitely be bundling up! At least the roads are to be clear. No snow today anyway!

We (Bible study) had that tater casserole at last month's Christmas brunch. Delishious!

I always admire your cooking! I would probably eat bologna sandwiches, cerealand crackers and milk were it not for Louis Dean. I guess I would make a good grazer and I do love salads.
