Life is a special occasion!

Today is Thanksgiving which is a special celebration typically full of family gatherings, holiday meals and giving thanks. It is a time of roasted turkeys, cranberry confections, cornbread stuffing, piping hot pumpkin pies, football games and holiday parades.
The three day festival that is now hailed as the first Thanksgiving, took place in the village of Plymouth in 1621. Governor William Bradford organized a feast to celebrate the Pilgrims’ first successful corn harvest.
Those in attendance included the Wampanoag chief Massasoit. Historians know the the Mayflowers sugar supply had run low, so the meal did not feature any pies, but on record indicates that four men were sent on a fowling mission, which very well may have resulted in a turkey.
Presidents Washington, Adams and Monroe proclaimed national Thanksgivings, but the customs soon fell out of favor. Then in the 1820’s, Sarah Josepha Hale began a campaign to reinstate the national celebration, and in 1863 President Lincoln proclaimed a Thursday in November as the National Day of Thanksgiving. The holiday has been celebrated ever since.
To celebrate today make sure to show your appreciation and gratitude.

Gratitude is the inward feeling of kindness received. Thankfulness is the natural impulse to express that feeling. Thanksgiving is the following of that impulse.

I would like to wish you all a very Happy Thanksgiving. I’m very thankful for all of you and do appreciate you too!
I try to be thankful every day, not just today and always list at least 3 things I’m thankful for.
We have a lot to be Thankful for this year. We all made it through the Covioid safely and most are vaccinated now. The grandchildren are even now able to receive them too.
We got together for our family celebration last Saturday and while not all were there it was so good to see the ones that made it. Today I’ll be going to DS#5’s house for a much smaller celebration but he is making a turkey and I’m taking a sweet potato casserole to share. He thought the kids might like the kind with the little marshmallows on it and since it’s not what I usually make I had to look up a recipe and I’m sharing that with you all:
Sweet Potato Casserole with Marshmallows
40 oz. cooked yams, drained
1/4 cup butter, melted
1/4 brown sugar
1 egg
1 tsp. cinnamon
1/4 tsp salt
8 oz. miniture marshmallows
1/4 cup chopped pecans, optional
Preheat hove to 350 degrees. Spray a baking dish with cooking spray and set aside.
Drain the canned yams, transfer them to a mixing blow and with a potato masher, mash them Add the melted butter, egg, brown sugar, cinnamon and salt. Mix well.
Spread the mashed mixture evenly in the prepared baking dish. Bake for 30 minutes. Remove the dish from the oven and top with marshmallows and pecans if desired.
Turn the oven broiler on and return the dish to the upper middle rack. Boil until marshmallows are lightly brawned.
Remove from oven and enjoy!
I didn’t add pecans as I didn’t know if the kids would ike nuts or not.
