Today is National Sandwich Day which is a celebration of one of America’s favorite foods: the sandwich. It is no coincidence that November 3rd. is also the birthday of the fourth Earl of Sandwich. This 18th century noble wanted to eat his meal with one hand during a 24 hour gambling event, so he had his servants serve him his lunchmeat between two slices of bread.
To commemorate the birth of the world’s first sandshich maker, November 3rd is now National Sandwich Day.
The most popular sandwich in America is the hamburger. Chicken sandwiches are a second close.
To celebrate, buy or make your favorite sandwich to enjoy at home.

I have sandwiches often and making a hamburger here at my house has become easy peasy. I’ve discovered some that are already made at the grocery store and all I have to do is heat them up in the microwave.
It’s Wednesday and my day to cook something new. I won’t be having a sandwich but on the menu is:
Apple Cider Pork Chops
Makes 6 servings
2 Tbsp. olive oil
6 boneless pork loin chops
1 garlic clove, minced
1 Tbsp. Dijon mustard
1 tsp. honey
1/2 tsp. apple pie spice
1/2 tsp ground pepper
1 tsp dried thyme
1/4 tsp salt
1 cup apple cider
1 Tbsp. plus 1 tsp. cornstarch
In a large skillet, heat olive oil over medium heat. Brown chops on both sides
Meanwhile in a small bowl, combine next 7 ingredients, stir in apple cider. Pour over pork chops . Reduce heat to medium low and cook covered until a thermometer inserted into the chops reads 145 degrees. Remove chops from skillet. Let stand 5 minutes.
In a small bowl, mix cornstarch and water until smooth, stir into cider mixture in skillet. Return to a boil, stirring constantly, cook and stir until thickened. Pour over chops and sprinkle with fresh parsley if desired.
This will be good served with some buttered noodles to soak up the sauce. It would also be great with rice or mashed potatoes.
Since they are boneless pork chops I suppose they would be good in a sandwich too, but for today I’ll be enjoying them with noodles instead.
Our weather continues to be colder here but I can still get out today and do my shopping. Thankfully, the roads are all clear. I’ve made up my menu to do my shopping from and here is the menu for next week:
Monday - Italian Turkey Meatballs
Wednesday- Apple Topped Ham Steak
Friday- Baked Cod Casserole
Weekend - Slow Simmered Burgundy Beef Stew

A meal can be a sandwich and a sandwich can be a meal.
Aw, pork ... the other white meat! I do love me a good sandwich -- burger, Reuben, patty melt, even turkey on rye. (Tis the season!) That's an interesting factoid about its origins!
