Today is Peanut Butter Fudge day which celebrates the perfect treat for anyone with a sweet tooth and a love for rich decadent desserts.
Peanut butter has been a staple in American kitchens for more than a century. It can be served in a sandwich, with ice cream, combined with chocolate or whipped into fudge.
According to legend, the original fudge can be traced back to the 1800’s when people used the word fudge to mean cheat or mess up. One day a chef accidentally fudged a batch of caramel he was try to make, inventing the delicious confection we know and love today.
Fudge is now made in many heavenly flavors, including the rich peanut butter variety. To celebrate today, try you hand at making a homemade batch in honor of the day. Enjoy!

Families are like fudge, mostly sweet with a few nuts.

There is no doubt that I have a sweet tooth and it only takes a little bit of fudge to satisfy it . Fudge is very rich and creamy. I’ll be sure to have a piece for my dessert today.
On the menu for this weekend is:
Creamy Chicken, Brussels Sprouts and Mushroom One Pot Pasta
makes 5 servings
8 oz. whole wheat linguine or spaghetti
1 lb. boneless, skinless chicken thighs
4 cups sliced mushrooms
2 cups sliced Brussels sprouts
1 onion, chopped
4 cloves garlic, thinly sliced
2 Tbsp. cream cheese
1 1/4 tsp. dried thyme
1/4 tsp. dried rosemary
1/4 tsp. salt
4 cups water
2 Tbsp. chopped fresh chives, optional
Combine pasta, chicken, mushrooms, brussels sprouts, onion, garlic, cheese, thyme, rosemary and salt in a large pot. Stir in water, Bring to a boil over high heat. Boil stirring frequently, until pasta is cooked and water has almost evaporated. Remove from heat and let stand, stirring occasional for 5 minutes.
Serve sprinkled with chives, if desired.
Although this recipe sounds very good, I really don’t need to cook at all today as I’ll be going to DS#6's home for our family feast and will be taking macaroni salad that I made yesterday to share with all. I’m sure to be bring some leftovers home too, so that could be my meal for Sunday, but as it happens I’ve been invited to dinner then at DS#5’s house to celebrate his daughter’s, Cutie Patootie, birthday.
Two meals out in a row is very usual for me and I'll feel like I’m still full from today’s feast. DS#6 and his family are wonderful hosts and I’m sure DS#5 and his family will be too!
I’ll have to put some leftovers in the freezer for the actual Thanksgiving day this coming Thursday when I’ll be staying at home by myself.
It will be so wonderful to see everyone ! We have such a good time being together. Nothing makes me happier than spending time with family. DDIL#1 and her family and my two sons and their families,that live out of state were not able to come in then for a visit. This year all of my Ohio families will be there. Too often time and distance keeps us apart, but everyone is always truly missed. I’m sending best wishes and love today for a very happy Thanksgiving.
The pictures today are of our family Thanksgiving in 2019 which was the last time we were able to be all together. DS#6 was our host then too, but we went to a rented space at one of his local parks for the day. This year we’re to be at his home.
