Today is Guy Fawkes Day which is an annual celebration commemorating the foil of the Gunpowder Plot in England on November 5th, 1605. This plot was a conspiracy to blow up the House of Parliament in London to kill King James I. Fawkes became involved in the small group of rebels and was valued for his experience in the military and his knowledge of explosives. After the plot was discovered, the conspiriators including Guy Fawkes were tortured and hanged.
Today celebrates the king’s escape from assinatation and is still a popular holiday in the United kingdom, as well as other current and former British territories including New Zealand, Canada, South Africa, Newfoundland, Australia, Bermuda and other Caribbean islands
People celebrate Guy Fawkes day by lighting fireworks and bonfires. Several tradition rhymes such as the bonfire cry often accompany the fan fare. To celebrate the festivities enjoy a bonfire!

Here in the United States the only time we have fireworks seems to be for the fourth of July, but this is a good time for bonfires. It you want to sit outside these days, you need a fire to sit by.
I really don’t have a place to build one here but my children do. We’ve enjoyed many fires outside over the years. Last Thanksgiving I sat by the fire to keep warm as we tried to stay outside that day to prevent the spread of covoid. That’s what the pictures are of today. Hopefully this year will be a lot different.
Today is my day to cook up something new to eat and on the menu is:
Loaded Sweet Potato Nacho Fries
Makes 10 servings
2 Tbsp. olive oil
2 medium sweet potatoes cut into sticks about 1/4 inch thick
1/4 tsp salt, plus a pinch, divided
2 tbsp. sour cream
1 tbsp lime juice
1 cup corn kernels, fresh or frozen
1/2 cup shreaded Cheddar cheese
1/2 cup black beans, rinsed
1/2 cup cherry tomatos halved or quartered
2 scallions sliced
1 avocado, chopped
2 Tbsp. chopped cilantro, optional
Preheat oven to 425 degrees. Heat oil in a large cast iron skillet over medium high heat. Add sweet potatoes and 1/4 tsp. salt. Cook, stirring occassionally until beginning to turn brown. Transfer the pan to the oven and bake potatoes until they are soft, about 15 to 20 minutes.
Meanwhile combine sour cream, lime juice and remaining salt in a small bowl. Top sweet potatoes with corn, cheese and beans. Continue baking until the cheese is melted. Top with tomatoes, scallions and avocado. Drizzle with sour cream mixture . Serve topped with cilantro if desired.
This could also be used as an appetizer but for me it will be dinner. I happend to have some frozen sweet potato fries, so I used them instead of making my own. It makes enough for a crowd so I’ll be cutting this recipe in half. That will be more than enough for me and I’ll still have some leftover for lunch tomorrow.
Today we’re to have more sunshine than clouds and it’s starting to warm up a bit so we should hit 50 degrees. Much warmer than we have been and the weekend should be even better !

Cuddle up and enjoy a nice warm fire outside today!
It's a dank and windy 57* day here in Alabama. Aside from the burn barrel, we've no place to start a fire -- but I have turned on the faux fireplace for atmosphere. Going to try my hand at making crack chicken in the slow cooker. Comfort food!
