While deviled eggs orignated in ancient Rome, the term deviled didn’t appear until the 18th century when it was used to describe highly seasoned, fried or boiled dishes. By the 19th century, the word deviled was used to describe hot seasonings in general. Today, not all deviled egg recipes are spicy, but a little cayenne pepper or hot mustard can always give them an extra kick.

I usually make deviled eggs for special dinners like Easter, but they are good anytime. I have a special container to keep them in with a lid that seals to keep them fresh and it holds 20 eggs for when I have company. I don’t usually make them just for me.
In case you’ve never made them, I’m sharing a recipe today:
Deviled Eggs
Makes 1 dozen
6 Hard cooked eggs, peeled
3 tbsp. mayonaise
1/2 tsp ground mustard
1/8 tsp each salt and pepper
Paprika if desired.
Cut eggs in half lengthwise. Slip out yolks and mash with a fork.
Stir in Mayonaise, mustard, salt and pepper. Fill whites with egg yolk mixture, heaping it lightly. Sprinkle with paprika, if desired. Cover and refrigerate overnight.
You could also use 1 tsp. yellow mustard instead of the ground mustard. Either one works just fine.

Thank you for including this recipe! It doesn't sound difficult at all!
One of our favorite deli restaurants used to offer 2 deviled eggs as a side instead of chips or french fries. We've not been there since the pandemic, but I hope they're still offering that as a healthier option.
