Today is Go For a Ride Day which reminds us to be in the moment and enjoy life’s aimless journeys.
During the busy holiday season, we don’t often take enough time to sit back and relax. So gas up your car and explore a new part of town, jump on the train and use the journey as a chance to destress, or simply enjoy a casual bike ride. Wherever your journey takes you, make sure to enjoy the ride.

Well I just enjoyed a long ride back and forth to DS#6’s house this past weekend for our family Thanksgiving. I did enjoy the ride as I didn’t have to do the driving, DSIL was the driver so I had nothing to do but relax and enjoy the ride. The pictures today show other rides I’ve enjoyed over the years. I used to love driving, but now anything longer than an hour seems to put me to sleep at the wheel, so on any long drives, someone else does the driving for me. I don’t drive after dark either, so that means I need a ride or I stay at home these days.
But when it comes to fixing meals at my house here, I’m in the driver seat. And on the menu for today is:
Turkey Cordon Bleu Casserole
Makes 8 servings
2 cups uncooked elbow macaroni
2 cans cream of chicken soup, undiluted
1/4 cup milk
1/4 cup grated Parmesan cheese
1 tso, prepared mustard
1 tsp paprika
1/2 tsp dried rosemary, crushed
1/4 tsp. garlic powder
1/8 tsp rubbed sage
2 cups cooked turkey, cubed
2 cups cubed cooked ham
2 cups shredded mozzella cheese
1/4 cup crushed Ritz crackers
Preheat oven to 350 degrees. Cook macaroni according to package instructions.
Meanwhile whisk the soup, milk, Parmesan cheese, mustard and seasonings.Stir in turkey, ham and mozzarella cheese .
Drain macaroni, add to soup mixture and toss to combine. Transfer to a greased baking dish; Sprinkle with crackers then bake uncovered until bubbly. About 30 minutes.
This would be a great recipe to make when you have leftovers from the holiday. I had turkey, but bought some ham to use. We usually don’t have ham for Thanksgiving, but often have both at Christmas.
We may see some snow today so it will be good to turn the oven on..I’m staying in and keeping warm.

How fortunate you are to have a chauffeur! I, too, grow weary after a while behind the wheel .. and forget about driving after dark. A couple of folks had to drop out of Thanksgiving dinner, but I'm still going ahead with my Publix order (serves 14-18). This way we'll all have plenty of left-overs. Your turkey casserole sounds delicious!
