Today is National Vanilla Cupcake Day which celebrates a delightful treat that can be found at most children’s birthday parties, some weddings and everywhere in between. Whether they are decorated with simple store bought frosting or a state of the art design, vanilla cupcakes are a delicious dessert for people of all ages to enjoy.
Cupcakes are called fairy cakes in Engled. The name is inspired by the idea that miniature cakes are the perfect size for a party of fairies to enjoy.

I do have some cupcakes here leftover from Halloween so that is what I’ll be having for dessert today They’ve been sitting here tempting me ever since. So it’s time to eat them up.
I’ve shown these cupcake pictures many times before, but they were the best I’ve ever had and I’ve sweet memories of the people I shared them with too.
I got my booster shot yesterday and have had no problems. The first two shots didn’t cause me any after effects either. Now I’m hoping that very soon all my grandchildren will also be vaccinated.
It’s my day to make up a new menu to do my grocery shopping from and on the menu for next week is:
Monday - Sausage, Brussels Sprout and Potato Soup
Wednesday- Chicken Mushroom Stew
Friday - Buttered Squash Carbonara with Brocolli
Weekend - Creamy Chicken, Brussels Sprouts and Mushroom One Pot Pasta
On the menu for today is:
Apple Topped Ham Steak
Makes 8 servings
4 fully cooked boneless ham stakes
1 cup chopped onion
3 cups apple juice
2 tsp. Dijon mustard
2 green apples, thinly sliced
2 red apples, thinly sliced
2 tbsp. cornstarch
1/4 cup cold water
1 tsp. rubbed sage
1/4 tsp pepper
In a large skillet coated with cooking spray, brown ham steaks over medium heat, remove and keep warm.
In same skillet saute onion until tender. Stir in apple juice and mustard, bring to a boil. Add apples and reduce heat, cover and simmer until apples are tender.
Combine cornstarch and water until smooth, stir into apple juice mixture. Bring to a boil and cook until thickened. Stir in sage and pepper. Return ham to skillet, heat through.
I’ll be cutting this recipe in half for me. I will use apple cider instead of apple juice because it is what I have on hand. I got some potato salad at the store, so I’ll have some of that as a side dish.
They say this will be the end of our nice weather, rain will be moving in and by the weekend we could see some snow. Not my favorite thing at all. We still have too many leaves on the trees and on the ground.
