Today is American Rycycles Day which celebrates the benefits of recycling. Recycling 1 ton of paper saves 17 trees, 2 barrels of oil, 4100 kilowatts of energy, and yards of landfill space, and 60 pounds of air pollution.
According to the Greeting Card Association, Americans purchase approximately 6.6 billion greeting cards each year. Think of all the trees we could save.
By reusing the Earth’s natural resources, we reduce green house gas emissions and landfills. We also ensure that these natural resources will be around for future generations to use.
This day encourages people to do their part and recycle. To celebrate, choose to send a digital greeting card instead of pepper this year!

I have two rocking chairs out on the car port. They are made of recycled plastic and they are very sturdy and will last for years. I still send out real birthday cards, There is something about actually receiving a real card that means a lot to me. Otherwise I do my best to recycle. I remember the days when our Boy Scout Troop did Paper Drives. They would ask for donations of newspaper to fill up a truck load.
Our coummuniy here does have a bin provided for Paper recycling . I don’t get the newspaper here, so I have very little to recycle. I read my newspaper, magazines and such on line, so I suppose that cuts down on paper use too. I also try to use less paper and plastic and use real dishes and silverware that you wash and don’t throw away. It’s a simple way to cut down on recyclables.
Everyone can do their part, simply and easily. Try to make sure that you do. Don’t throw your clothes away, donate them to someone who can use them. Some of my favorite clothes came from Goodwill.
It’s Monday and my day to cook up something new to eat here at my house. The leftovers from the weekend are now history.
On the menu today is:
Sausage, Brussels Sprout and Potato Soup
Makes 4 servings
3 Tbsp. olive oil, divided
8 oz. Italian sausage , casing removed
1 cup diced onion
1/2 cup diced carrots
1/2 cup diced celery
2 Tbsp finely chopped garlic
2 tsp paprika
12 oz.yellow potatoes, sliced
8 oz. Brussels Sprouts, trimmed and sliced
4 cups chicken broth
2 tbsp. red wine vinegar
1/2 tsp salt
1/2 tsp ground pepper
1/4 cup chopped flat leaf parsley
Heat 2 Tbsp. oil in large pot over medium heat. Add sausage and cook, stirring occassionally and breaking up with the spoon until browned. Transfer to a plate.
Add remaining 2 Tbsp. oil, onion, carrots and celery to the pot; cook stirring occasionally until softened. Add garlic and paprika. Cook stirring for 30 seconds. Add potatoes, Brussels sprouts and broth; bring to a boil over high heat. Reduce heat to a simmer and cook stirring occassionally until the potatoes are tender.
Stir in sausage, vinegar, salt and pepper. Serve sprinkled with porsley if desired.
You could also use sliced Keibassa sausage if you prefer. I used Italian because I had it on hand. This would be good served with some cheese toast on the side.
It’s to be another cold day for us so some hot soup will be appreciated.
The pictures today show a great way to use up old socks, especially those that are missing a pair. We made snow men a few years ago and had a lot of fun.
