Today is also International Men’s Day which focuses on improving men’s health, promoting gender equality, and highlighting positive male role models.
The origin of this holiday can be traced back to the 1960’s, but the first official celebration did not occur until 1999. Dr Jerome Teelucksingh conceived and cordonaated the event in Port of Spain, the capital of the Republic of Trinidad and Tabogo. He promoted the importance of male role models and eventually received written support from the United Nations. Today, over 60 countries recognize this event.
Celebrations typically include marches, debates, panel discussions, public seminars, art displays, and much more.

This grandson’s birthday will be another long distance one for me, but I’ll be seeing him at our family Thanksgiving feast this Saturday. As far as I know, all the families in Ohio will be present for the first time in 2 years. I’m so looking forward to it ! Meanwhile a birthday card to him went out in the mail full of birthday wishes and love.
Having had DDH die from a sudden heart attack several years ago, I know just how important men’s health can be. Although he’d had a resent check up with his doctor, he was under a lot of stress which I’m sure caused his heart attack. Make no mistake stress can be a killer.
I happen to have heard from DS#4 who recently changed jobs and is now working from home. His old job had him under a lot of stress, so I’m glad he was able to get this new one. Everything is going better for him now.
Today is my day to make up something new for dinner and on the menu is:
Buttered Squash Carbonara with Broccoli
makes 4 servings
1 butternut squash, peeled
2 cups small broccoli florets
2 Tbsp. olive oil
1/2 tsp. ground pepper, divided
1/4 tsp. salt
2 eggs, at room temperature
3/4 cup grated Paremesan cheese, divided
4 strips bacon, optional
2 cloves garlic, grated
1/4 cup broth
Position oven racks in upper and lower thirds of oven; Preheat to 400 degrees.
Cut the neck of the squash from the bulb. Using the blade of a spiral vegetable slicer or a regular vegetable peeler, spralize or cut the squash neck into long strands. This should make about 10 cups of noodles. Reserve the rest for another use.
Combine the spiraled squash, brocolli, oil, 1/4 tsp pepper and salt in a large bowl. Divide mixture between 2 large rimmed baking sheets. Roast just until tender, about 12 to 14 minutes.
Meanwhile whisk eggs and 1/2 cup cheese in a medium bowl.
Cook bacon, if using, in a large nonstick skillet over medium high heat until crisp.Transfer to a paper towel lined plate. Remove the pan from the heat; add garlic and stir until fragrant. Stir in broth and the remaining 1/4 tso. pepper. Transfer 3 tablespoons of the broth to the egg mixture, whisking constantly until smooth. Add the egg mixture to the pan. Cook over low heat, stirring until thick and creamy. Add the roasted vegetables and gently toss to coat. Transfer to a serving bowl.
Serve topped with crumbled bacon and remaining 1/4 cup cheese.
As I try to keep Friday’s meatless, I will not be using bacon today. Although it does sound good. I also used some frozen squash chunks which were roasted with the broccoli and I used regular spaghetti noodles instead of the spiraled squash noodles.
Serving size is 1 1/4 cups. I love carbonara!
