Today is National Fluffernutter Day which honors the yummy sandwich made with bread, peanut butter and marshmallow fluff. It is now a classic Americn treat that is typical enjoyed in school cafeterias, college dorms and local diners nationwide.
Marshmallow can can be traced back to ancient Egypt when people first bagan to harvest the marshmallow plant. During the 19th century, French pharmacists extracted the juice and heated it with egg whites and sugar creating Marshmallow creme.
Then in 1917, Archibald Qyery of Sommerville, Massachusetts created the special formula for marshmallow fluff we know and love today. The city of Somerville celebrates with the famous Who the Fluff festival every year.

I’m a big fan of peanut butter, but not so much of marshmallow fluff these days. I’ve been trying to cut down on the sugar I consume. Trying to do all around healthier eating and today I go back for a check up with the doctor to see how I am doing. My blood pressure is still reading around 140/80 most days and that is not low enough. Now they’d prefer to see it 120/70. We’ll see what he has to say…
On the menu for today is:
Chicken and Sun-dried Tomato Orzo
8 oz. orzo, preferably whole wheat
1 cup water
1/2 cup chopped sun dried tomatoes, divided
1 plum tomato, diced
1 clove garlic, minced
3 tsp. fresh marjoram, divided
1 tablespoon red wine vinegar
2 tbsp. plus 2 tbsp. olive oil, divided
4 boneless skinless chicken breasts
1/2 tsp salt
1/4 tsp ground black pepper
1 oz. artichoke hearts
1/2 c. shredded Romano cheese, divided
Cook orzo in a large pan of boiling water until just tender according to package directions. Drain and rinse
Meanwhile place one cup water, 1/4 cup sun-dried tomatoes, plam tomato, garlic, marjoram, vinegar and 2 teaspoons oil in a blender. Blend until just a few chunks remain.
Season chicken with salt and pepper on both sides. Heating remaining 1 tbsp. oil in large skillet over medium high heat. Add chicken and cook adjusting the heat as necessary to prevent burning until golden brown.and no longer pink in the middle. Transfer to plate and tent with foil to keep warm,
Pour the tomato sauce into the pan and bring to a bol. Measure out 1/2 cup sauce into small bowl. Add remaining 1/4 cup sun-dried tomatoes to the pan with the orzo, artichoke hearts and cook, stirring, until heated through
Divide among 4 plates Slice chicken. Top each portion of pasta with sliced chicken , 2 tbsp of the reserved tomato sauce and a sprinkling of the remaining cheese and marjoram.
I didn’t have any fresh marjoram so I used a tsp. of dried oregano instead. I[‘ll be having a side of Sautéed spinach with this and one of my garlic breadsticks

There's nothing like a bit of fluff to improve our lives.
Love all the pumpkins and guess I am way behind times because I had not heard of Fluffernuffer sandwich. Don't think I would like it but peanut butter and jelly is fine.
I think your column last year was the first I'd ever heard of fluffernutter! I wonder if that's not a regional thing?
I'm no medical professional, but your BP doesn't sound bad at all! I quick looked at the little chart my primary care provider gave me, and 120/70's supposed to be the ideal. Most important, you're feeling good!
PS - Now I'm wishing I hadn't passed by that jar of JIF while at the grocery. :)
Never heard of fluffernutter but I don't think I would like it though I do like peanut butter. Another great recipe you are sharing Ma!
