Today is National Nut Day which honors one of the healthiest, most nutritious, and most delicious snacks.
Medical studies have shown that eating nuts reduces hypertension and the risks associated with heart disease. Nuts are also full of protein, fiber and unsaturated fats.
Peanuts are not really nuts, they are legumes and belong in the bean family. Some popular kinds of nuts include pecans, walnuts, pistachio, almonds and macadamia nuts.
Celebrate today and eat lots of nuts as a snack or on top your favorite dessert.

If life gives you nuts then be a nut cracker..

I do love nuts and have them often. My favorite kind are pecans. But I do like the others too and often use them in my baking and cooking. There’s no end to how you can use them.
But for today my dinner doesn’t contain any nuts. On the menu today is:
Light Chicken Parmesan
1 lb. cherry tomatoes
6 garlic cloves, minced
2 tbsp. plus 2 tsp. olive oil, divided
3/4 tsp salt, divided
3/4 tsp pepper, divided
8 oz. uncooked whole wheat linguine
2 boneless skinless chicken breasts
2 eggs, beaten
1/3 cup italian seasoned bread crumbs
1 tbsp tomato paste
1/2 cup. mozzerela cheese, shredded
1/2. Parmesan cheese, grated
1/4 cup fresh basil
Preheat oven to 425 degrees. Using aluminum foil, build a 10 inch square pan with a inch edge on all sides. Place square on one side of a rimmed baking sheet. Place tomatoes garlic and 1/4 tsp of the salt and pepper in foil square. Stir to combine. Bake in preheated oven 20 ininutes.
While tomatoes bake, cook linguine according to package directions. Drain and cover to keep warm.
Cut each chicken breast in half horizontally, parallel to work surface, to form 4 thin cutlets. Place eggs in a shallow dish. Place breadcrumbs in a second dish. Dip chicken cutlets, one at a time in egg and then dredge in crumbs. Place coated cutlets on the baking sheet inside foil square. Bake chicken and tomatoes until chicken is done and tomatoes are lightly browned, about 15 minutes.
Place tomato mixture, tomato paste and remaining 2 tablespoons oil in a a food processor, pulse until finely chopped and almost smooth. Set aside. Increase oven temperature to broil with oven rack 6 inches from heat. Top each cutlet with cheeses. Broil until cheese is bubbly. Serve chicken over pasta and drizzle with tomato sauce. Sprinkle with basil.
I’ve learned to love the whole wheat pasta as much as the regular. After using it, I cannot really tell the difference, but it is so much better for us.
Today the skies are still mostly cloudy, but clearing is expected later in the day. Finally a day without rain! I’ll be going out to get my hair cut. It’s hard to believe another month has passed so quickly, but it has grown and you know when you have a short hair cut, it’s time to get it done.
I’ve more pumpkin pictures to share today. This time in the form of jack o lanterns It is getting to be that time of year after all.

Love all kinds of nuts! In fact, it was you who got me putting walnut pieces in my salads. Yum! That's a bit disconcerting to know peanuts aren't really nuts. A jar of the unsalted kind is practically a staple in our kitchen cabinet. I usually add them to a bowl of jello or cottage cheese, and they're great for snacking before bed.
I love all those carved pumpkins!! ARe they real pumpkins? My hands are too arthritic to carve anymore. It's harder to do than I thought!!
Such cute pumpkins! We are going to the pumpkin patch Saturday to pick up pumpkins to carve Monday. I like nuts and in fact had some for a snack this afternoon. Very healthy to eat!
