Cookies originated from extra cake batter that Dutch bakers experimented with cooking at varying oven temperatures. Eventually they got it right, realized how yummy they are, and named this tiny cakes cookies.

October means Pumpkin Month to me. All things pumpkin and I have plenty of pumpkin pictures to share with you all today. I won’t be making any cookies today, no matter that I would love to have some, but on the menu for today is:
Pumpkin Alfredo
1 tbsp olive oil
1 clove garlic, minced
1 tbsp. flour
3/4 cup milk
2 oz. neufchâtel cream cheese
1/4 cup pumpkin puree
1/2 cup parmesan cheese
salt and pepper, to taste
pinch of nutmeg, optional
4 oz cooked whole wheat pasta
Heat olive oil in medium skillet over medium heat. Add garlic cook until fragrant, stirring constantly , about 30 seconds.
Whisk in the flour and then whisk in the milk until smooth. Lower heat until medium low and cook until mixture thickens.
Whisk in the neufchâtel, pumpkin, and parmesan until smooth and all mixed. Season to taste with salt and nutmeg if using.
Toss with cooked and drained pasta of choice. Serve immediately.
I forgot to post next weeks menu yesterday so I’ll also be sharing that today too. I always make one up so that I can do my shopping list for the week

What’s New at My House

Have to say thanks for all the well wishes on my furnace yesterday, It was fixed in about 10 minutes. Seems there was a spider web blocking the the passage of gas to it and it only took them a few minutes to diagnose and fix it. Another cold morning here with temps in the 40's but its now nice and warm and cozy inside.
Lots of special days this month! Glad they were able to get your furnace fixed quickly and easily. October sure came in like a lion. It's even been in the 70s here in Florida since yesterday morning. I can't wait to plan some nice comfort foods for next week!
October may be my favorite month, and the thought of homemade cookies just reinforces it. No matter how busy she was, my mother always took time to make my father's favorite Springerle cookies and the traditional sugar. (After I'd gone to bed, on account I'd try to filch the raw dough. LOL!) Rather than make a regular batch, I may try making just a few in the Air Fryer Digi Oven.
I didn't know that's where cookies came from! I make gluten free peanut butter cookies that uses peanut butter, sugar, egg and vanilla. I put 1 tablespoon of cornstarch in sometimes. Oh and chocolate chips! Makes the house smell so good. I think I will make some tonight! ☺
That is too funny about the spider web causing your furnace problems! That was such an easy repair I bet it made the repairman's day! Your pumpkin Alfredo sounds really delicious Ma! I never thought of pumpkins to be used like this. Definitely going to have to try it. Lots of cute pictures with pumpkins. We're going to plan a visit to the pumpkin patch in a few weeks to pick out carving pumpkins :)
