ON THE BRIGHT SIDE
FOR THURSDAY, OCTOBER 15TH, 2020

The moments of our lives may be bright with possibility, dark with fear or sadness, or even plain everyday gray, but God's glory never fades. May God's glory shine into the exciting lights, upsetting darks, and boring grays of your every day.

Life is a special occasion!!

Today is National Grouch Day which is a special day for all the grouchy people out there to celebrate. Grouches are typically miserable, grumpy and irritable. They thrive off of others misfortunes, and only then are happy.
National Grouch Day allows all grouches to celebrate their way of life. This days also gives all the normally chipper people a day to complain for once. For those everyday grouches, here is a way to live a happier life, do fun or silly activities, allow yourself only 5 minutes of negative time, do something to benefit others, or enjoy some healthy foods.
Celebrate today by being pessimistic, cranky and irritable. and then be nice tomorrow. It’s also a good time to watch an episode of Sesame Street in honor of Oscar the Grouch.
If you can’t see the bright side, polish the dull side
THOUGHT FOR TODAY
Make two grins grow where there was only a grouch before.
Elbert Hubbard
I’ve got to say that most of the time I’m a happy, optimistic person. About the only time I get grouchy is before my morning coffee and that’s because I’m not really awake yet, and haven’t really woken up. I need that good cup of coffee to get me going and then I’m fine.
Why be a grouch, when you can be happy. Life is too short to be angry or irritable. So I drink my coffee and get over it.
There’s nothing like a smile to cheer someone up. So smile at a grouch today and cheer them up. I remember when the babes were little and be grouchy, I’d tickle them until they gave me lots of smiles. There was no room for grouchiness at out house. Life is such a gift, we have to smile and be happy and enjoy it.
Dinner tonight is a recipe that makes me happy because, I’ve got frozen meatballs in the freezer. I didn’t make my own, but the recipe below tells you how if you want to make your own.
Italian Turkey Meatballs
Makes 6 servings
for the meatballs:
1.3 lb. ground turkey 99% lean
1/4 c. whole wheat bred crumbs
1/4 cup Parmesan/Romano cheese
1/4 cup parsley, finely chopped
1 egg
1 large clove garlic, minced
1 tsp. salt plus ground pepper
for the sauce:
2 tsp olive oil
4 cloves garlic, minced
2 28 oz. cans crushed
1 onion
1 bay leaf
1 tsp oregano
1/4 cup fresh chopped basil
salt and pepper to taste
In a medium size pot, heat olive oil, add garlic and sauté until golden. Add crushed tomatoes, onion, salt, pepper, oregano, basil and bay leaf. Stir and reduce heat to low. Cover and let simmer 10 minutes.
Meanwhile in large bowl, combine turkey, breadcrumbs, egg, parsley garlic and cheese. Using wet hands, mix all ingredients until everything is combined. Form small meatballs, about the size of ping pong balls.
Add the meatballs to the sauce and cook about 20 minutes. Discard the bay leaf and serve over pasta Or serve on Whole wheat buns for an Italian hero sandwich.
Since I had already prepared frozen meatballs, all I had to do was make the suuce and cook them in the crockpot for 4 hours. I’ve chosen to have them on spaghetti today and on a Sandwich for lunch tomorrow. I didn’t have fresh herbs so used dried instead. As a rule of thumb I use one teaspoon dried for 3 teaspoons of fresh.
I got the laundry done earlier in the week and shopping done yesterday, so today is my day for housework. The meatballs will simmer away while I’m working and then dinner will be done.
Today’s pictures are of lots of smiling faces, hope they cheer you up today.
I hope you all have a GREAT day.. Happy Thursday!

Almighty and eternal God,
Protect our military
as they discharge their duties
with the shield of your strength,
may the power of your love
enable them to return home in safety
that with all who love them
they may ever praise you for your loving care.
AND bless our Police Officers, Firefighters
and Paramedics and EMT’s
We ask this through Christ our Lord.

Smile today and be happy and make someone else happy too !
No grouchy faces in your family! I have some of my homemade meatballs in the freezer, I'll be having those this weekend :)
Thanks for the tip about fresh-to-dried herbs! Only recently have I begun experimenting with herbs in my cooking. Discovered (like my hubby) sometimes a little goes a LONG way.
You've sure chosen some great photos. Funny how smiles work; their faces may be on my monitor but I'm smiling right back.
I have "days of the week" when I set aside for certain things, too. I used to do all my grocery shopping on Thursdays... I have switched to Tuesdays. On Wednesday, I try to get my appoitments done... veterinarian, dentist, etc. etc. I take it easy on Thursdays, pick up around the house, bake. I go to church on Saturday afternoon (mass) and sleep in a little on Sunday. For years, I used to wake at 5:30, and go out and get the animals cared for before I went to work. Now, they and I sleep a little later and I go out around 8 to get everyone started on their days. I try to smile behind my mask... and yes, I wear a mask where ever I go, and will, for the foreseeable future. Stay safe!
All great smiling faces!! Grouches always make me think of Oscar the Grouch from Sesame Street :)
