Today is National Taco Day which honors the traditional Mexican dis made with chicken, beef, vegetables or seafood. The filling is folded inside a soft or hard tortilla and garnished with topping such as cheese, salsa or guacamole.
In 1520, the conquistador Hernado Cortez wrote to King Charles V of Spain to describe his experiences in the New World, in his letter he mentioned the delicious meal the Aztec inhabitants prepared with tlaxcalli, or tortilla . Its the first historical reference too tacos.
Today tacos are enjoyed all over the world. To celebrate today make your own taco .

There are no tacos at my house today because I’m enjoying my chicken and broccoli rice casserole that I made yesterday. I cook once for the weekend and enjoy it twice. Truly there is more than two days worth of food to enjoy with this casserole. I’ll be having it later in the week for lunch.
Sundays are always my day to relax, and refresh for the week to come. We all need that one way or the other in order to be the best we can be.
I usually enjoy Taco Tuesday’s which has become a popular day to have taco’s. But this week I’m sure there is something different on the menu too. But they are always good whenever you choose to have them.
The temps have been on the cool side here this weekend and today we’re supposed to have rain. I’ll be enjoying another day staying in and reading another book and maybe making a list of what I’d like to do in the coming week. Nothing much is going on and I suppose that’s a good thing. Better the ordinary than something unusual these days.
If you are one that has people to do things with, enjoy them to the fullest. This solitary life is way too quiet for me. The pictures today are of DS#5 and family having some fall fun a couple of years ago.

A lot of people are feeling like you Ma about the solitary life. Its gone on so long with no end in sight.
We had tacos last Monday when the family came to dinner. Its always a crowd pleaser and super easy to make plus everyone can put in what they want for their own meal :)

The weather folks are keeping an eye on what looks to be another hurricane forming in the Gulf ... so our 'crisp' air will most likely be delayed a bit longer. All the same, it's a delight to live somewhere with 4 seasons! Hope your new week will be very blessed!
