Today is also National Caramel Custard Day which is a rich flavorful dessert that originated in Europe. The Ancient Romans experimented with the binding properties of eggs in their cooking but custard as we know it didn’t emerge until the Middle Ages.
Today there are many variations of the classic custard dessert. These include vanilla, lemon and caramel. To celebrate today, try your hand at making your own caramel and pour it over custard for a scrumptious treat.

This granddaughters birthday is another of my long distance celebrations so I’ll be lighting my happy birthday candle in her honor and sending off a card in the mail filled with love and birthday wishes.
I haven’t been making many desserts lately but I do love caramel. I have some little packets ready made in the fridge, so maybe I’ll have some apple slices with caramel sauce today. I do love it!
My dad’s favorite pie used to be custard but we never had it with caramel sauce. It could be that will be coming in the near future. It does sound delicious.
Today is my day to cook for the weekend and this is what’s on the menu:
Broccoli, Cheese and Rice Casserole
Serve this with Baked Chicken for a pleasing family meal
Serves 8
1 tbsp. unsalted butter
8 oz. mushrooms, stemmed and chopped
1 cup onion, chopped
4 cloves garlic, minced
1 tbsp. finely chopped fresh thyme
3 1/2 cups cooked brown rice
1 cup chicken broth
1/2 c. sour cream
2 tbsp. mayonaise
1 tsp Dijon mustard
1/2 tsp salt
1/2 tsp ground pepper
1 tbsp. cornstarch
3 c.broccoli florets, cut into bite size pieces
1 cup shredded Cheddar Cheese
Preheat broiler and position rack 8 inches from heat source. Melt butter in a large high sided oven proof skillet over medium high heat. Add mushrooms and onion, cook, stirring often until browned and tender. Add garlic and thyme, cook, stirring constantly until fragrant, about 1 minute. Add rice, stirring to coat and break up clumps.
Whisk broth, sour cream, mayonnaise, mustard, salt and pepper in a bowl.until smooth. Whisk in cornstarch. Add mixture to pan; stir to combine Stir in broccol’ let mixture come to a boil. Cover and reduce heat to medium and cook until broccoli is bright green and tender. Remove from heat; sprinkle with cheese
Transfer the skillet to the oven; broil until cheese is melted. Serve hot.
For an easy dinner I think I’ll put some cubed cooked chicken in the mix and make it a one pot meal.
