Today is National Boston Cream Pie Day which honors a man named Augustin F. Anazin who invented Boston Cream Pie while working as a chef in the Parker House. Boston Cream pie is believed to have been created in the 1870’s around the time that the Parker House roll appeared. The famous pie has been referred to as many different names, including American Pudding Cake Pie, Washington Pie, Chocolate Cream Pie, Parker House Chocolate Cream Pie, and finally Boston Cream Pie.
In 1996 Boston Cream Pie became the official dessert of Massachusetts in a bid sponsored by Norton High School. This bill defeated both Indian Pudding and the Toll House cookies as the state’s official dessert. Boston Cream pie is now also a popular doughnut, coffee and ice cream flavor.
Although It is called a pie, Boston Cream Pie is actually a cake. It consists of two round layers of sponge cake with a thick vanilla custard filling. It is usually frosted with a chocolate glaze but it can also be topped with confectioners’ sugar. The dessert is served wedges just like a pie. Enjoy a big slice today to celebrate the day !

I’ve made this dessert many times over the years and everyone always loves it, but for today I’ll be making dinner, not dessert. On the menu is:
Loaded Sweet Potatoes
Makes 4 servings
2 medium sweet potatoes
1/2 c. shredded Cheddar Cheese
3 scallions, sliced, divided
2 slices cooked bacon, chopped, divided
1/4 tsp. salt
1/4 tsp. pepper
4 tbsp. sour cream
Preheat oven to 400 degrees.Prick sweet potatoes all over with a fork. Microwave on high until tender.about 12 minutes. When cool enough to handle, slice the potatoes in half lengthwise. Spoon the flesh into a medium bowl. Stir in cheese, all but 1 tbsp of the scallions, half the bacon, salt and pepper.
Place the potato shells on a baking sheet. Divide the mixture between the shells. Bake until cheese is melted and the filling is hot, 12 to 15 minutes. Remove from oven and top each half with 1 tbsp sour cream. Sprinkle with remaining tbsp. scallions and remaining bacon.
For me this will make a dinner, but you might choose it for a side dish instead. It’s delicious and very satisfying.
We’ve had two lovely days in a row now with temps in the upper 70’s but tonight rain is moving back in and they say tomorrow we’ll be lucky to see a high 50 degrees. BrrrChill ! This up and down weather is hard to take, but I do love those sunny warm days we get now and then.
I didn’t get my hair cut as planned yesterday as my sylist’s sister died. So it will be reschuled later on. Please keep her and her family in your prayers. A loved ones loss is never easy. The pictures today are from happier times when DD, my niece, my sister and I got our hair done. We all use the same stylist and had gone out for lunch afterward.

Hmmmm. I don't recall being fond of sweet potatoes in the past, but this recipe sounds so good. It must be great fun having family (bonus friends!) to go to the beauty salon with. Of course, I'll say a prayer on her behalf; thanks for asking.
I never saw a recipe for loaded sweet potatoes but I love sweet potatoes. This is definitely a keeper to try! So sorry about the stylist's sister; will say a prayer for comfort.
