Today is Boss’s Day which recognizes all those in a supervisory role that demonstrates kindness, fairness and understanding.
Boss’s Day dates back to 1958 when State Farm insurance employee Patricial Cays Haroski registered the date with the government. Haroski wanted to honor her father who was also her boss, for the advice he gave to her and her siblings throughout their careers. She choose his birthday as the date for this special day.
To celebrate you could chip in with fellow employees for a bouquet of flowers or send your boss a card to show appreciation.

I no longer to have a boss to appreciate, but thankfully for the most part most of boss’s were very nice people. I did have a few bad ones over the years, but they only helped me to appreciate the good ones. Now I’m the boss of myself and get to choose what I do everyday.. I’m so glad I was able to make it to retirement and could work when I was younger. My jobs gave me the ability to retire. Life in the slow lane is more than I ever could have imagined and I am thankful for them every day.
More than anything it gives me time to spend with my family and be available when they need me. So many times when I was working, I couldn’t do that. Everything was based on my work schedule and whether or not I had vacation days to take off when needed. I try not to refuse any time I can spend with them. They are pretty much my life.
Because my job is now keeping healthy so I can do what is needed, on the menu today is another new recipe for me.
Cornbread Chicken Casserole
3 boneless chicken breasts cut in cubs or cooked chicken in bite size pieces
1/4 cup diced onion
1/3 cup butter
1 pkg. frozen mixed vegetables
1/3 cup flour
2/3 cup milk
1 1/4 cup dhicken broth
1 box cornbread mix prepared to package directions
If cooking chicken, heat 2 tbsp oil in large pot. Add cubed chicken and season. Cook until done. Drain and set aside.
Melt butter in large pot on medium high heat. Add onions and cook till tender. Add bag of frozen vegetables and cook until warmed through.
Stir in flour and cook for 2 minutes stirring constantly. Whisk in chicken broth. Add milk and whisk to combine. Allow mixture to cook to thicken. Stir in cooked chicken and cook for another few minutes. Until entire mixture is hot. Remove from heat.
Pour in a 9 by 9 baking pan . Top with prepared cornbread mix. Smoothing until it covers the top.
Bake according to directions on the cornbread mix. Once bread is done, remove from oven and allow to sit 5 minutes before serving.
Cornmeal is the basic ingredient of corn brad. It’s a whole grain. Whole grain foods cantain the bran as as well as the germ that provides needed fiber for the diet that help to keep us stay regulated but also absorb cholesterols and lowers blood sugars as they move through the digestive system. It’s filling without adding calories of it’s own. It’s healthier to make your own. But for today I’m using a package mix because it’s what I have on hand.
Today’s pictures do include some corn bread which I always make in my cast iron skillet. But they also include some pictures of corn fields which are popular places this time of year. Many people love to go through a corn maze.

I do love my life in the slow lane.
Having worked outside the home 48 years, I'm soooo glad to be free from obligatory things like Boss's Day. Like you, I've had more nice/kind bosses than the couple stinkers. A few that come to mind are now deceased, but (most of the time) I tried to show them I appreciated them by bringing them coffee, etc. I never understood how some secretarial/assistance types thought that was beneath them.
Thanks for sharing this recipe. I've not made cornbread since January, but it's getting that time of year!
My daughter Summer once told me, "Work is so TIME CONSUMING!!!"
I love the retired life too but I only worked a handful of years in my 72 years and am grateful I do to work at a job outside the home. I work inside the home a lot!
I'm glad I don't have a boss anymore! Cornbread isn't real cornbread unless it's cooked in the cast iron skillet. Enjoy your new casserole this evening :)
Over the years I have had the majority of good bosses so that's a good thing! What I do know is I would never want to be a boss/supervisor. I like to get the work done; don't want to "boss" anyone around to get it done :)
