Today is World Gratitude Day which is an opportunity to show your gratitude and appreciation.
The United Nations Meditation Group created World Gratitude Day to express appreciation for the great things that individuals and groups do. This recognition is on a global basis. According to their website: World Gratitude Day presents an award to someone who we feel has done something outstanding in the spirit of Globalism.
On a smaller scale, seek to give gratitude and appreciation to people in your life who have done good deeds. It could be something as simple as a 'thank you' or a card of thanks to someone.
The awareness of the benefits of having time in one’s life for gratitude, appreciation and positive reflection have become increasingly apparent. The hope of the founders of Gratitude Day is that by taking time, one day a year, to reflect on the many amazing things we have in our lives, it would positively impact our well being and make us happier, more contented people.

Being thankful is something I try to remember to do every day. Writing 3 things down each day on my thankful list is my way of sharing what I’m thankful for. The important things in my life and that I’m most thankful for are my faith, my family and my friends. I’m thankful too for the simple things in life like food, shelter and clothes to wear. More than not you’ll also see that I enjoy a good cup of coffee and a donut and am very thankful for bananas that keep leg cramps away.
I lead a simple life and appreciate all the people that bring lots of wonderful smiles my way each day. I’m thankful for the internet that keeps me connected with my family even though many are far away.
There is always, always something to be thankful for.

It’s National Pecan Cookie Day!
The pecan tree is the official state tree of Texas. Pecan nuts, have a rich, buttery flavor that makes them a fine ingredient in baking. They say that a handful of pecans a day might even help to reduce your cholesterol!
From Texas to the rest of the USA, it's National Pecan Cookie Day.
TEXAS PECAN PIE COOKIES
1 c. butter
1/2 c. sugar
1/2 c. dark corn syrup
2 eggs, separated
2 1/2 c. unsifted flour
PECAN FILLING:
1 c. powdered sugar
1/4 c. butter
3 tbsp. dark corn syrup
1/2 c. chopped pecans
First prepare filling, combine sugar, butter and syrup in a saucepan, cook over medium heat, stirring occasionally until mixture reaches a full boil. Remove from heat stir in pecans. Chill.
For Cookies: Stir butter and sugar on low speed in large bowl. Add corn syrup and egg yolks; beat well. Stir in flour gradually. Chill several hours. Beat egg whites slightly. Using 1 teaspoon of dough for each cookie roll into balls. Brush lightly with egg whites. Bake at 375 degrees for 5 minutes. Remove from oven. Roll 1/2 teaspoon chilled pecan filling and firmly press into center of each cookie, return to oven, bake 5 minutes longer. Cool 5 minutes on cookie sheet. Cool completely on rack.

Those pecan cookies look good! You do certainly live a life of gratitude, Ma. I am trying to do more of that myself, to at least write down one thing I am grateful for daily.
