Today is Johnny Appleseed Day which honors one of America's great legends. Johnny Appleseed was a real person. John Chapman was among the American settlers who were captivated by the movement west across the continent. As Johnny Appleseed travelled west, he planted apple trees along the way, and sold trees to settlers. With every apple tree that was planted, the legend grew.
John Chapman, aka Johnny Appleseed, was born on September 26, 1774, which coincides with the season of the apple harvest. Celebrate today with an apple rich menu. Include fresh apples for snacks, and some applesauce or apple pie for dessert.

Today’s pictures are of DS#1 and his family's adventures in making apple butter. Thankfully they do give away a lot of it and I love their apple butter. It’s made by using my Mom’s recipe and has become a family tradition for them.
Apples are good and good for you too just about anyway you want to fix and eat them. Apples lower cholesterol, apples keep you slim, apples prevent breathing problems, apples fight colds and boost brain power.
No wonder they say an apple a day keeps the doctor away. I do love apples and will be including more of them in my diet now that fall is here and fresh ones are available.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
In order to keep with the apple theme for today I found this recipe to share.
Spiced Apple Pancakes
2 cups Flour
2 Tablespoons Baking Powder
1 1/2 teaspoon Ground Cinnamon
1 teaspoon Ground Ginger
1/2 teaspoon Salt
2 Eggs
1 1/2 cup Milk
Tablespoon Maple Syrup
2 Gala Apples, Cored And Grated
1/2 cup Chopped Pecans
Maple Syrup And Fresh Fruit, To Serve
In a large bowl, whisk together flour, baking powder, cinnamon, ginger and salt.
In a medium sized bowl, whisk eggs, milk and maple syrup. Pour egg mixture into flour mixture and stir to combine. Stir in grated apples and pecans.
Heat a nonstick or cast iron skillet over medium heat, or heat a griddle to 375ºF. Lightly coat skillet with cooking spray.
Using a 1/4 cup measuring cup, scoop batter into the skillet, a few pancakes at a time. When pancakes start to bubble on top, flip and cook until pancakes are cooked through all the way. Repeat with remaining batter.
Makes 20 pancakes.
Serve pancakes with maple syrup and fresh fruit, if desired.
