Popsicles are very cooling and refreshing and it’s easy to make your own. Since we’re having some hot weather here at my house this week, any thing cool and refreshing sounds good to me. Popsicles are very easy to make and I found this recipe for them to share today.
Blueberry Ice Popsicles
This cool treat takes some time at the stove, but the intense berry flavor is worth it. If you don't have ice pop molds, you can use small paper cups. Place filled cups on a plate, stretch tin foil across the tops, poke Popsicle sticks through the foil into the cups, and freeze for at least four hours.
Makes 6 to 8 pops
2 cups fresh blueberries
1/2 cup sugar
1 cup water
1 teaspoon lemon juice
Stir first 3 ingredients in a pan over medium high heat until sugar dissolves. Bring to a boil, stirring occasionally, until berries have burst, about 5 minutes.
Mix in lemon juice. Cool to room temperature, then pour into molds and freeze.
Of course we can all expect to have some blue tongues after eating one of these but how refreshing!
The seasonal decorating has begun and surely but slowly will get done. One of the nice things is that these will remain up here at my house until the week before Thanksgiving. The week before Thanksgiving I’ll be decorating for a gingerbread house extravaganza at grand’ma’s house for my family. More to come on that later on.
The pictures today are from last fall. I’m going to try a few different ideas this year using the same things. We’ll see how it goes! I try not to buy anything new as I already have way too much stuff.
