Today is French Toast Day which celebrates the perfect way to start or end your day. French Toast is typically made with bread, eggs and milk, and then topped with delicious maple syrup. Many variations of this classic breakfast can be found around the world.
The origin of French toast is unknown, but recipes date back to the sixteenth century in Europe. Prior to the Hundred Years war, French toast was known in England as poor knights’ pudding because it was a simple inexpensive dish that a knight with no money could afford. In France, iit was called, pan perdu or lost bread. because it was a way of using lost or stale bread.
To celebrate today , have French toast for breakfast or dinner. It makes a great meal for either one

I’ll probably heve my french toast for lunch today as I already have leftover pork roast to have for dinner. I just have to heat it up.
This is a family favorite and I used to make it for breakfast often. I do have some maple syrup on hand to put on it along with some butter.
It’s a delicious meal any time of day and I often have bacon or sausage with it .
Years ago I came across a recipe for French Toast Casserole so I thought I’d share it with you again today. DDIl#4 said she made it for Thanksgiving. It’s a great dish to prepare the night before and then just bake it in the morning.
French Toast Casserole
Makes 12 servings
1 loaf French bread cut into 1 inch cubes
8 eggs, lightly beaten
3 cups milk
4 tsp. suggar
1 tsp vanilla
3/4 tsp salt
Topping:
2 Tbsp.butter
3 Tbsp.sugar
2 tsp ground cinnamon
Maple syrup, optional
Place bread cubes in a greased 13 by 9 inch baking dish. In a large bowl, whisk the eggs, milk, sugar, vanilla and salt. Pour over bread. Cover and refrigerate for 8 hours or overnight.
Remove from refrigerator 30 minutes before baking. Preheat oven to 350 degrees . Dot with butter, sugar and cinnamon, sprinkle over the top.
Cover and bake until a knife inserted in the center comes out clean. abut 45 minutes. Serve with maple syrup if desired.
You can also put the cinnamon mixtures in with the egg mixture if you want. This is a great way to use up any old bread you have on hand, it doesn’t have to be French Bread. Just make sure it is not soft fresh bread, or it will be soggy. This is another large recipe so for me I’d probably only make half.
