Today is National Oatmeal Day which honors the extremely healthy, versatile food that can be eaten any time of day, it is both filling and low in calories, which makes it the perfect breafsat or snack. Oatmeal is also delicious baked in cookies.
The Quaker Man is one of the oldest advertising mascots in America. The Quaker Oats Company registered ham as the first trademark for breakfast cereal in 1877. The character purposely embodies the values of faith, honesty, and purity. Enjoy National Oatmeal Day and celebrate history and tastiness!

Oatmeal has been a popular breakfast food for me for a long time, most of my life. I also use in baking cookies and other sweet treats. Oatmeal will make a nice breakfast for me, but I’ve also enjoyed it for supper. Something hot and creamy always seems to hit the spot.
No oatmeal recipe for today, I’m having
One Dish Ground Turkey, Sweet Potato Skillet
1 lb. ground turkey
1 onion, chopped
3 garlic cloves minced
1/4 cup tomato paste
1 medium sweet potato, peeled and cubed
1 cup chicken broth
2 tsp paprika
1/2 tsp salt
1/4 tsp pepper
3 cups chopped fresh baby spinach
Dash crushed red pepper flakes
1 medium ripe avocado peeled and sliced
Minced fresh mint, optional
In a large skillet, cook turkey, onion, and garlic over medium hear until turkey is no longer pink and onions are tender. Breaking up turkey into crumbles, drain, add tomato paste, cook and stir 1 minute longer.
Add sweet potato, broth. paprika, and salt and pepper. Bring to a boil, reduce heat, simmer, covered, until sweet potatos are tender. stirring occasionally. Add spinach, and red pepper flakes and cook and stir until spinach is wilted. Serve with avocado, if desired and mint.
I’ve got some leftover cornbread to have along with this today. It’ll make a great one dish dinner.

ADVICE FOR TODAY
One of lifes best coping mechanisms is to know the difference between an inconvenience and a problem. If you break your nick, if you have nothing to eat, if your house is on fire, then you’ve got a problem. Everything else is inconvenience. Life is inconvenient. Life is lumpy. A lump in the oatmeal, a lump in the throat and lump in the breast are not the same kind of lump. One needs to learn the difference.
