On December 22nd we celebrate Forefathers’ Day. Observed primarily in Plymouth, Massachusetts, since the late 1700s, Forefathers' Day commemorates the Pilgrims landing on Plymouth Rock in 1620. The traditional celebratory dish served for Forefathers' Day is Plymouth Succotash, with corned beef, fowl, salt pork, beans, potatoes and green-top turnips.
To celebrate Forefathers’ Day properly, you could try preparing and eating the hallowed Forefather’s traditional succotash, just to get a tiny taste of all the hardships and discomforts that they had to go through to help make America what it is today. Succotash is in no way bad tasting, mind you; it just doesn’t have much to offer in the way of nutrition when you think about all of the hard, physical work that had to be done at that time. Make it yourself using this easy recipe:
Forefathers’ Style Succotash
2 cups fresh lima beans
1 1/2 cups diced onion
2 tablespoons oil
4 cups fresh corn kernels
2 tablespoons unsalted butter
Kosher salt and freshly ground black pepper
3 tablespoons chopped fresh chives
Place lima beans in a medium saucepan, and cover with water. Bring to a boil over medium-high heat; reduce heat to medium, and simmer, stirring occasionally, 20 minutes or until beans are tender. Drain, reserving 1/2 cup cooking liquid. Sauté diced onion in hot oil in a large skillet over medium-high heat 5 minutes. Stir in corn; cook, stirring often, 6 minutes or until corn is tender. Stir in beans and 1/2 cup reserved cooking liquid; cook, stirring occasionally, 5 minutes. Stir in butter, and add salt and pepper to taste. Sprinkle with chives.
Few things are more important to Americans than heritage. Remembering where you come from, and how hard you’ve worked to get where you are are all integral parts of the concept of the American dream.

Our forefathers did have an important part to play in who we are today, but still we all have a choice in what we say and do. Everyday is a new opportunity.
My faith has seen me through a lot of tough times. In our daily lives, we need to believe that when we go through hard times, the result will be good. But when we're hurting, probably one of the most challenging things for us to remember is that God is going to work it out for our good.
Thinking about all the tough times our forefathers had, we can see the proof in the toil they put into making a great country. It also makes me think about the importance of the genealogy of Jesus and how important forefathers were in those times too. That’s why I put pictures of the Nativity Set in my post today.
I think that I’ll be making some of that succotash today in honor of our forefathers. Of course mine will be in a much smaller quantity, the recipe above would make enough for a crowd.

ADVICE FOR TODAY
Our success will not come from the acts of our forefathers, but can come alone from what we are doing now. Those who have inherited rich blood can use that richness in building greatness in themselves, but those who have not the privilege of such inheritance need not be discouraged. They can create their own rich blood and make it as rich as they like.

I always enjoy looking at Nativity sets :) such a wide variety of them out there too :)
I never had succotash, but I think I might make a small batch of it in the new year myself :)
