Today is National Fritters Day, Aren't we all lucky that this this special day has finally arrived!?
Before you can begin to celebrate this very important day, you need to know what a fritter is. Many people do not know, making it all the more fun to eat your first fritter today. A fritter is a fried cake or dough with fruit or meats inside.
Whatever you do, do not fritter this day away without eating at least one fritter.

Someone has time to fritter away, but not me...
There are many different kinds of fritters but my favorite has to be Apple Fritters. I’ve never made my own, but thought it was time I did so. I found this recipe to make soon.
Homemade Apple Fritters
They can be served as a warm, yummy breakfast treat or as a scrumptious dessert with vanilla ice cream. You can dust them with powdered sugar or dunk them in a light, sweet, doughnut glaze,
FRITTERS
2 cups Flour
1/2 cup Sugar
3 Tablespoons Sugar
2-1/4 teaspoons Baking Powder
1-1/4 teaspoon Salt
2 teaspoons Ground Cinnamon
2 whole Large Eggs
3/4 cups Whole Milk
2 teaspoons Vanilla Extract
2 Tablespoons Melted Butter
2 whole Granny Smith Apples, Peeled And Diced
Powdered Sugar.optional, For Dusting
GLAZE, optional
1-1/2 cup Powdered Sugar
1/4 teaspoon Salt
1/4 teaspoon Vanilla
1/4 cup Milk
In a mixing bowl, combine flour, sugar, baking powder, cinnamon, and salt.
In a separate bowl, beat the eggs with a fork, then add milk, melted butter, and vanilla.
Gently fold dry and wet ingredients together until just combined. do not over mix. Fold in apples. Add enough apples to make a very chunky batter. You want the apples to shine though!
Heat a couple of inches of canola oil over medium to medium low heat. When it gets hot, drop a little drop of batter into the oil. If it sizzles immediately and rises to the top, the oil is ready; if it burns quickly, turn down the heat.
Drop teaspoons of batter into the hot oil, six or eight at a time. Sometimes they'll flip over by themselves; sometimes you have to flip them. Just watch them and make sure they don't get too brown, but cook them long enough to make sure the batter's cooked through, about 2 to 2 1/2 minutes total.
Remove and drain on a paper towel. Dust very generously with powdered sugar, or dip fritters in a light doughnut glaze, mix all glaze ingredients together, then dunk warm fritters.
Serve warm!

Today is the day for me to do some shopping and run some errands. Busy Busy Day! No frittering around being done here at all. The pictures for today date back to 2011, but here at my house many things look just about the same.

ADVICE FOR TODAY
Never again clutter your days or nights with so many menial and unimportant things that you have no time to accept a real challenge when it comes along. This applies to play as well as work. A day merely survived is no cause for celebration. You are not here to fritter away your precious hours when you have the ability to accomplish so much by making a slight change in your routine. No more busy work. No more hiding from success. Leave time, leave space, to grow. Now. Now! Not tomorrow!

I love apple fritters :) The minute I read that today was National Fritters Day, I thought of apple fritters :) You do sound like you have a busy day, Ma; hope the weather holds for you while you do your running around.
