Today is Roasted Chestnuts Day. Every Christmas holiday we all sing about 'Chestnuts roasting on an open fire….' But, have you ever roasted chestnuts!? It may surprise you to know, that like me, some people have never even tasted a chestnut. It's time we changed that, by simply roasting some chestnuts today. Roast them in early evening, so they will be done in time for an evening snack. They go great with a cup of hot chocolate.
With the holidays rapidly approaching, take a few minutes to roast chestnuts. Make sure to roast enough to share with family, coworkers, and friends. You can even wrap some up and include them in gift baskets.

I can’t remember ever having a roasted chestnut. They sound good and I do love most any kind of nut, but here at my house my favorites are walnuts and pecans.
I googled roasted chestnuts in our area to see if any were available to buy and found that fresh chestnuts are available in a few places from late September into October. I’ll be keeping an eye out for them next year. And the local grocery store had some available.
I did find a recipe for making spiced holiday nuts which does use my favorite nuts, so that is what I’m sharing today. Planters also makes a good Winter Spice Nut mix available in the stores this time of year.
2 tablespoons olive oil
1/2 teaspoon ground ginger
1/2 teaspoon curry powder
1/4 teaspoon cayenne pepper
2 tablespoons sugar
1 tablespoon honey
3/4 cup walnut halves
3/4 cup pecan halves
Line baking sheet with foil. Lightly oil foil. Heat 2 tablespoons oil in large nonstick skillet over medium heat. Add ginger, curry powder and cayenne pepper; sauté until fragrant, about 5 seconds. Stir in sugar and honey. Add nuts. Stir until honey mixture is amber in color and nuts are well coated, about 6 minutes. Transfer nut mixture to prepared baking sheet. Working quickly, separate nuts with spoon. Sprinkle with salt. Cool. Can be made 3 days ahead. Store in airtight container at room temperature.
Nuts have always been a favorite holiday treat here at my house. Right now I have some chocolate covered cashews on the table. Yum!

I like nuts too, Ma; such a healthy snack :) Funny, we were just talking about chestnuts last night at dinner; probably because we were listening to Christmas music and that song came on about roasting chestnuts. I have had roasted chestnuts when I was growing up. My mom would get some around Christmastime. They are delicious. One just needs to remember to poke a hole in each chestnut or while they are cooking they can explode :)

Lovely nut recipe. I have gotten the Planter's Winter Mix but homemade would be better! I do miss chestnuts. It seemed they were easier to find when I was young.
I am glad that you are thankful for all kinds of nuts...I am thinking that could include me! LOL. xx
