St. Patrick's Day is an enchanted time - a day to begin transforming winter's dreams into summer's magic.

We are wearing the green today ! Most of the snow is finally gone and the pictures today prove it.
Our grass isn’t as green as I’d like it, but we can see grass !! I took the pictures this past Saturday and there has been more melting going on since then. After the warmth we experienced on Monday more melted away.
I made some good potato soup to celebrate St. Patrick’s day. I tried out a new recipe called Bacon and Baked Potato soup. I didn’t use baked potatoes the way the recipe called for but cooked my potatoes right in the broth.
1 Tbsp. butter or margarine
1/4 cup chopped yellow onion
1/4 cup chopped celery
1 can, 14 1/2 oz., chicken broth
1 1/4 cups milk
3/4 lb. baking potatoes, about 2, baked, cut into 1/2-inch cubes
1/8 tsp. pepper
1 green onion, sliced, divided
8 slices cooked Bacon, crumbled, divided
3/4 cup Cheddar & American, divided
1/4 cup Sour Cream
MELT butter in large saucepan or Dutch oven on medium heat. Add yellow onions and celery; cook and stir 5 min. or until crisp-tender. Add next 4 ingredients; bring just to boil, stirring constantly. Slightly crush potatoes with back of spoon. Simmer on medium low heat 5 min., stirring frequently.
RESERVE 1 Tbsp. green onions and 2 Tbsp. each bacon and cheese. Add remaining green onions, bacon and cheese to soup; cook 5 min. or until cheese is melted, stirring constantly.
SERVE topped with reserved green onions, bacon, cheese and sour cream.

So neat to see green, Ma, and great that it happened on St. Patrick's Day! I bet it will green up as spring begins!! Yum on that potato soup! We made the Lazy Day Stew Sunday; boy that was delicious and again lots leftover for a few meals ahead!! I'm definitely going to try this recipe!!

I love potato soup, and it is cold and rainy here today... but... the corned beef is in the oven, I had a fiasco yesterday so we are having it tonight.
