March 25th is Pecan Day. It’s a rather nutty day. We are celebrating the day in 1775 when George Washington planted pecan trees in Mount Vernon that were given to him by Thomas Jefferson.
Pecan is from an Algonquian word, meaning a nut requiring a stone to crack. Pecans are a good source of protein and unsaturated fats.
A little nutty perhaps, but true: the only nut tree native to North America is Pecan trees. This nutty day is all about enjoying this delicious nut, which is known for its light crunch and buttery flavor.

My favorite nut is Pecans. I love them plain, salted, toasted, in ice cream, in candy and in pies too. Did you know that you can freeze and refreeze them for up to 2 years. The bag of pecans you purchase today will be great for pies next Christmas, and the one after that! Frozen and refrozen pecans do not lose their flavor or texture, so you can buy in bulk and eat at your leisure
I found this Pecan Pie Bar recipe to share today. I haven’t made it yet but do love Pecan Pie. Refrigerated crescent dough makes this pecan bar recipe simple and quick to prepare.
Crust
1 can refrigerated crescent dinner rolls
Filling
1/2 cup chopped pecans
1/2 cup sugar
1/2 cup corn syrup
1 tablespoon butter, melted
1/2 teaspoon vanilla
1 egg, beaten
Heat oven to 350 degrees. Unroll dough; separate dough into 2 long rectangles. Place in ungreased 13x9-inch pan; press over bottom and 1/2 inch up sides to form crust. Firmly press perforations to seal.
Bake 8 minutes. Meanwhile, in medium bowl, mix filling ingredients. Pour filling over partially baked crust.
Bake 18 to 22 minutes longer or until golden brown. Cool completely, about 1 hour. For bars, cut into 6 rows by 4 rows. Store at room temperature.
Just about a year ago today I was visiting DS#4 and his family and that is what the pictures are of today. Needless to say, the tree shown was not a pecan tree, but a beautiful weeping cherry tree instead. We’re supposed to be warming up a bit today, but rain is coming our way too and then we’ll return to colder days for a while. Hope you all have a wonderful Wednesday !

Unfortunately, I've no pecans at work. So I shall eat dry roasted peanuts. Enjoy your day MA.
That is interesting that frozen and re-frozen pecans still hold up in their flavor and texture! I love pecans! But funny I don't like pecan pie :)
