I do believe that our thoughts have a lot to do with the way we feel. Positive thoughts help to make for a positive day. If some one knows that they are in your thoughts and prayers, I also think it helps them, knowing that some else cares.
Old friends, true friends, and new friends are so precious and when they spend some time in our thoughts, we realize just how important they are.
This week I’ve tried out a few new recipes and among them was this recipe for Cheddar Biscuits
Cheddar Biscuits
2 1/4cups all-purpose baking mix
1/2 cups shredded cheddar Cheese
2 Tbsp. chopped fresh herbs
1/4 cup Sour Cream
2 Tbsp. Dijon Mustard
1/3 cup milk
1 egg, beaten
12 parsley leaves for decoration
HEAT oven to 425°F.
COMBINE baking mix, cheese and herbs in large bowl. Mix sour cream and mustard in small bowl. Gradually stir in milk. Add to baking mix mixture; stir just until moistened.
PLACE dough on surface lightly dusted with additional baking mix; knead 10 times. Pat into 1/2 inch thick circle. Cut with 2 inch biscuit cutter dusted with baking mix. Place biscuits, 2 inches apart, on baking sheet. Brush lightly with egg; top with parsley. Brush with remaining egg.
The thought of adding a parsley leaf on top for St. Patrick’s Day was appealing, but I didn’t have any fresh parsley so I tried adding a dried one, but it instantly crumbled when I tried to pick it up so I added some dried parsley flakes to the mix. I didn’t brush on the egg, but added an egg to the mixture because I didn’t read the directions correctly, but I have to say they were the best Cheddar Biscuits I’ve ever made.

You do find good recipes to try, Ma! This one for the biscuits looks delicioius!! Wise advice for us today to be all ears, especially to those who need to have someone there to talk with them and share whatever they might be going through.
