February 26th is Chili Day. Some like it hot, some like it mild, some like it on top of a baked potato and some prefer it without beans, but however you like it, Chili Day is the perfect excuse for millions of spicy food fans all around the world to chow down on a bowl of the fiery favorite.

A chilly day is a good day to have Chili. I make it often and love it when I have leftovers to use. I know I’ve shared my chili recipe before and also how I love chili dogs, and wagon wheel chili too. I even use leftover chili to make a taco salad. Anyway I went on a search to find something different and this is what I found.
Leftovers can be spread over a layer of cream cheese topped with shredded cheese, warmed then topped with salsa, sour cream, jalapeños and served with tortillas
Plus, if you are tired of the same old pasta and sauce, mix it up with this chili recipe served on Spaghetti
Cincinnati Chili
4 tbsp extra virgin olive oil
2 chopped sweet Vidalia onions
2 pounds ground beef or ground turkey
Kosher salt and freshly ground black pepper
4 minced cloves of garlic
1 15 ounce can tomato sauce
1 small can or 2 small fresh diced mild peppers
2 medium tomatoes, diced
1/4 cup apple cider vinegar
1/4 cup chili powder
2 tbsps paprika
1 tbsp ground cinnamon
2 tsps ground cumin
1/2 tsp ground allspice
1/4 tsp ground cloves
1/4 tsp cayenne pepper
1 pound spaghetti, cooked
Pinto beans, grated cheddar cheese, diced onions, oyster crackers, and sour cream for serving
In a heavy bottom large pot, heat the olive oil in a large over medium high heat. Add the onions and cook, stirring, until translucent, about 5 minutes and transfer to a plate.
Add the ground beef to the pot. Sprinkle with 1/2 tsp salt and black pepper and cook; break up the meat until no longer pink, about 4 to 6 minutes. Remove from the heat and return the cooked onions to the pot; stir in the garlic.
Combine the tomato sauce, diced tomatoes, vinegar, chili powder, paprika, cinnamon, cumin, allspice, cloves, and cayenne in a bowl. Add to the pot along with 1 cup water and stir to combine.
Bring to a simmer over medium low heat and cook until the chili is slightly thickened, about 1 1/2 hours. Serve the chili over the spaghetti and let everyone dress their own chili with their favorites.
Take the chill off and warm up with chili today !

That was an interesting thing to do with chili with the cream cheese, Ma. Would make a good dip indeed! I do like chili as long as it is not too hot and it is always warming to the stomach indeed!
