February 23rd is National Banana Bread Day! If you've got a bunch of bananas wasting away on your counter and you're thinking about giving them the heave ho, STOP in the name of banana bread! You'll never have a better excuse to grab a fork and mash up old bananas than this moist quick bread. Bake a delicious banana bread to celebrate this day.

Banana Bread is an all time favorite here at my house and I make it often as I seem to always have some ripe bananas on my kitchen countertop. I’ve shared my recipe for Banana Bread with chocolate chips before so today I thought I’d share a Quick and Easy Banana Raisin Bread recipe.
3 ripe bananas
1/3 c. sugar
1 1/2 c. all-purpose flour
1/4 c. milk
1 egg
1/2 tsp. baking powder
1 tsp. baking soda
2 tbsp. vegetable oil
1 tbsp. cinnamon
1/2 c. raisins
Sprinkles, optional
Preheat oven to 350 degrees. Mash bananas with a fork. Add everything but the flour and raisins. Blend on low speed; add flour and raisins. Blend until moist.
Pour into a greased loaf pan, top with sprinkles and bake for 45 minutes.
Raisins are so very good for you. When I was a child and when my children were little, raisins were often a quick and easy snack. They really enjoyed having their own little box of raisins to hold in their hand. Raisins pack more nutrition than their small size might indicate. When grapes are dehydrated to produce raisins, the nutrients become more concentrated, making a handful of raisins a snack rich in B vitamins, iron and potassium. Besides nutrients, raisins are also a good source of carbohydrates for energy.
You can also spread peanut butter on a few celery sticks, then sprinkle a few raisins on top for a quick snack between meals or make your own trail mix by combining almonds, walnuts, peanuts and raisins in a small plastic bag. Sweet and salty are always a good treat.
It looks as though the winter weather, cold and snow, is going to be with us once again this week. There really doesn’t seem to be any relief in sight.
