Today is supposed to be the best weather wise that we've had in a long time. Yesterday wasn't bad at all either. Upper 70's and 0% precipitation. I've been looking forward to this day for a while now. Hopefully I'm going to get out and about and enjoy this fine day mostly outdoors for a change. I have plans to do so for sure…we'll see.
On my calendar it says it is National Pecan Day and I must say pecans are one of my favorite nuts. I also love walnuts but for today I'll stick with pecans.
I found this simple dessert recipe with pecans to share with you all today:
Love pecan pie? Get the same rich flavor in a bar cookie with only a few minutes of preparation.
Crust
1 pouch (1 lb 1.5 oz) sugar cookie mix
1/2 cup butter or margarine, softened
1 egg
Filling
1 cup packed brown sugar
2 tablespoons all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon vanilla
2 eggs
1 1/2 cups chopped pecans
Heat oven to 350°F. Spray bottom of 13x9-inch pan with cooking spray. In large bowl, stir all Crust ingredients until dough forms. Press dough in bottom of pan using floured fingers. Bake 20 minutes.
Meanwhile, in medium bowl, stir all Pecan Filling ingredients until well blended. Pour over hot crust. Bake 15 minutes or until center is set. Cool completely, about 2 hours. For bars, cut into 9 rows by 4 rows. Store covered in refrigerator.
