July 13th is National Ice Cream Day in the U.S., a dairy good time to scoop up some frozen ice cream into a sugar cone, a waffle cone or a sundae dish. Mix up an ice cream shake or malt, if you prefer, on National Ice Cream Day.
Ice cream is happiness condensed.

The pictures above were taken last summer on a outing with DS#6 and his family and the one at the very bottom is of DS#4's two boys. I'm a lot like the kids and do enjoy my ice cream. It's a wonderful treat summer or winter for that matter.
One of my favorite sundae's is a Turtle Sundae made with pecans and carmel sauce and topped off with hot fudge sauce and whipped cream. So today I thought I'd share a recipe for a great Turtle dessert.
Crust
2 cups (about 12) finely crushed Chocolate Chocolate Chip Cookies
1/4 cup Butter, softened
Filling
1 1/3 cups chopped pecans
2 cups caramel ice cream topping
1 1/2 cups hot fudge ice cream topping
1 1/2 quarts vanilla ice cream, slightly softened
Garnish
Whipped cream
Combine all crust ingredients in bowl. Press onto bottom of ungreased 13x9-inch pan. Freeze 10 minutes.
Sprinkle 1/2 cup pecans over crust. Microwave 3/4 cup caramel topping in bowl 20-30 seconds or until warm. Drizzle over pecans. Microwave 1/2 cup fudge topping in bowl 20-30 seconds or until warm. Drizzle over caramel. Cover completely with half of ice cream; freeze 30 minutes.
Repeat layer with 1/2 cup pecans, 3/4 cup caramel topping, 1/2 cup fudge topping and remaining ice cream, slightly heating both toppings, if necessary. Freeze 2 hours or overnight until set.
Place each serving on individual plate or in shallow bowl. Microwave both remaining toppings in bowls 30-60 seconds or until warm. Drizzle each serving with ice cream toppings. Top each with dollop of whipped cream. Sprinkle with remaining pecans.

PRAYER REQUEST
Last week I requested prayers for a friend that was in a great deal of pain and had difficulty walking. She finally got the results back from the testing they did and what they found in some combination is causing all the pain . Please keep her on your prayer list. They found that she has, as if one thing wouldn't have been enough! She has four problems. A spine bone slipping forward on another, facet arthrosis degenerative disease, disk space narrowing and diffuse end plate spurring. May the dear Lord bless her with healing and guide the doctors caring for her.
