Chocolate lovers, rejoice! July 7th is Chocolate Day. According to popular legend, chocolate first appeared as a tasty treat on July 7, 1550. Cocoa buffs have celebrated ever since.
Please pass the chocolate. It's July 7th, Chocolate Day.
Anything is good if it's made of chocolate.

The first picture today is the view from the porch on one of the many rainy days here. The gorgeous plant in the picture above is my yucca plant. Everything is growing here in leaps and bounds with all the rain we've had. Every day for a couple of weeks now it has been raining. Thankfully we do get little peeps of the sun now and then too.
I'd like to be able to share a bit of our rain with those that need it. We have hod more than our fair share here. When looking at the long range forecast, the first day with 0% chance of rain will be Friday, July 12th. I can hardly wait.
I guess I'll need some chocolate today. It does make us feel better. I found a good recipe using chocolate so I'm sharing that with you all today.
Boston Creme Pie
Here's the pie that made Boston famous—easy, creamy and topped with a luscious layer of chocolate.
1pkg. (3.4 oz.) Vanilla Flavor Instant Pudding
1cup plus 2 Tbsp. cold milk, divided
1-1/2cups thawed Whipped Topping
1 round yellow cake layer (8 or 9 inch)
1oz. BAKER'S Unsweetened Chocolate
1Tbsp. butter
3/4cup powdered sugar
BEAT pudding mix and 1 cup milk in medium bowl with whisk 2 min. Stir in COOL WHIP. Let stand 5 min. Meanwhile, cut cake horizontally into 2 layers with serrated knife.
STACK cake layers on plate, spreading pudding mixture between layers
MICROWAVE chocolate and butter in medium microwaveable bowl on HIGH 1 min. or until butter is melted; stir until chocolate is completely melted and mixture is well blended. Add sugar and remaining milk; mix well. Spread over cake. Refrigerate 1 hour.
