Use today as an opportunity to be kind to family, friends, neighbors, and others. You will find kindness rubs off on others, and generates even more kindness.

NEW IN THE KITCHEN
INDIAN PUDDING DAY
A traditional New England dessert, Indian pudding consists of corn, milk, sugar or molasses, spices, nuts and raisins. But plan ahead, because Indian pudding must be baked for a long time,
CROCK POT INDIAN PUDDING
3 cups milk
1/2 cup cornmeal
1/2 teaspoon salt
3 eggs
1/4 cup light brown sugar
1/3 cup molasses
2 tablespoons butter
1/2 teaspoon cinnamon
1/4 teaspoon allspice
1/2 teaspoon ginger
Raisins and/or nuts are optional
Lightly grease crock pot. Preheat on high for 20 minutes. Meanwhile bring milk, cornmeal and salt to a boil. Boil, stirring constantly, for 5 minutes. Cover and simmer an additional 10 minutes.
In a large bowl, combine remaining ingredients. Gradually beat in hot cornmeal mixture and whisk until smooth. Pour into crock pot and cook on high for 2 to 3 hours or low for 6 to 8 hours. Makes 4 servings.

Did you ever happen to think that the reason most babies are smiling is because that is what they see when they look at us? It's true, we cannot help but look at one of those tiny little folks and smile.
I think that people forget to smile at each other. I know that this is true because whenever I'm out shopping, I very rarely see any smiles. That simple smile does so much.
Today I'm thankful that when I'm with my family there are always lots of SMILES and laughter.
