MICKEY MOUSE'S BIRTHDAY
On this day in 1928, Walt Disney debuted his talking, animated cartoon, Steamboat Willie, at the Colony Theatre in New York. The short film featured a character who had been named Mortimer. Walt changed the name to Mickey Mouse.
Disney gave Mickey the resilient personality to keep trying to do the best he could, whatever the challenges. Mickey Mouse is still with us, in cartoons, on TV, in books and even in his own stores. What a great success story, especially for a mouse!

When people laugh at Mickey Mouse, it's because he's so human; and that is the secret of his popularity, Disney believed. You can dream, create, design, and build the most wonderful place in the world, but it requires people to make the dream a reality.
If you can dream it, you can do it. Always remember this whole thing was started by a mouse.

NEW IN THE KITCHEN
NATIONAL VICHYSSOISE DAY
National Vichyssoise Day, a time to enjoy this French-style soup of leeks, potatoes, onions, cream and chicken stock. This soup is often served cold but this time of year I'd prefer my soup hot.
AUTUMN ASPARAGUS VICHYSSOISE
2 tablespoons butter
1 medium onion, chopped
2 cloves garlic, chopped small
1 pound fresh asparagus, chopped
3 medium potatoes, peeled and diced
2 1/2 cups vegetable broth or chicken broth
1 cup half and half
1/2 teaspoon salt
1/2 teaspoon white pepper
1/4 cup grated Parmesan cheese
In a large saucepan, melt butter on medium-high heat. Add onions, garlic, asparagus and potatoes and cook until onions are tender, about 10 minutes. Remove a few asparagus tips and reserve for garnish. Add chicken broth and bring to boil. Reduce heat and simmer for 10-15 minutes or until vegetables are very tender. Puree soup in a food processor or blender until smooth, then return to saucepan. Add half-and-half cream and heat through, but do not boil. Season with salt and white pepper to taste. Serve garnished with grated cheese and reserved asparagus tips. This soup can be chilled and served cold. Serves 4
NOTE: you could also substitute 2 granny smith apples, peeled, cored and diced for the asparagus making yet another delicious Autumn soup to enjoy.

I always like to look on the optimistic side of life, but I am realistic enough to know that life is a complex matter.

Having a grateful heart will always help you cope with the complexities of your life. Every once in a while, we encounter circumstances that were not expected. This is when Gratitude makes itself obvious, as being grateful can mark the difference between feeling miserable or experiencing an overall pleasant life.
Life is a grand mixture of the good and the bad and today I'm thankful for all the opportunities I have to appreciate and learn from it. We have many things in life to be thankful for each and every day. We are thankful for things because they add meaning to our life, bring us joy and laughter, teach us to grow in mind, body and spirit, and help us to be a better person.
Last night I saw the 1st snow flakes of the season. We had some lake effect snow move though our area but it didn't last long and there was nothing on the ground. Today should be partly cloudy and some warmer too.
There is something to be thankful for in every day!
