This birthday is one I won't be there to celebrate but hopefully my gift will be there soon. I got it sent out on Monday morning. How I wish I could be at all the birthday celebrations my family has.

NATIONAL FAST FOOD DAYThese homemade treats taste just like, if not better, than those foods you tend to buy on the fly. Home made is money saved.
Chicken Nuggets
12 oz. chicken breasts, boneless and skinless
3 egg whites
1 1/2 Tablespoons honey mustard
Salt and black pepper
2/3 cup breadcrumbs
1/3 cup ground parmesan cheese, the kind that is sold in a large shaker
Assorted dipping sauces
Cut chicken into 1/2 inch strips, cutting each to a 2-3 inch length, salt and pepper
Combine honey mustard and egg whites
Combine breadcrumbs and parmesan cheese
Dip chicken pieces in egg white mixture then into the breadcrumb mixture until well coated
Saute chicken in a hot pan coated with a small amount of vegetable oil or olive oil till crispy brown and cooked through, Or you can bake on a slightly greased baking sheet at 425 for 20 minutes or until well browned and cooked through.
Serve with your preferred dipping sauce
Makes 4 servings

Have you ever tasted baby food? I have. It’s terribly bland. But babies have no other choice without teeth. They certainly can’t eat a nice, juicy steak!
Sadly, some of us are content with lives that are like bland baby food. They are the ones that complain about everything wrong in the world instead of looking around and seeing all the beauty in it.
Today I'm thankful for all the wonderful ways I can celebrate each day and see the miracles that our dear Lord provides for us. They are there if we take the time to look.
Children can find in every moment something new and wonderful. Living your life with the simplicity of a child can change your whole outlook in a most amazing way.
