It's MONDAY!
LOOSEN UP, LIGHTEN UP DAY
We are encouraged today to do just that - loosen up and lighten up. It's time to take things a little slower, de-stress and unwind. We're all busy and it's easy to get caught up into a spiral of stress, but we can take a mental step back to loosen up and lighten up and find some balance. It's a good day to remind others of the benefits of joy and laughter.
Love puts the fun in together, the sad in apart, and the joy in a heart.

NEW IN THE KITCHEN
NATIONAL PICKLE DAYPickling isn't just about giving baby cucumbers a tart or sour flavor. It's a method for preserving foods that otherwise would have spoiled in the days before refrigeration. There all kinds of ways to enjoy pickles and one of my favorites is fried dill pickles.
AUTHENTIC FRIED DILL PICKLES
1 cup buttermilk
1 large egg
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
vegetable oil, for deep frying
4 large, crisp dill pickles, cut into 3/4-inch chips
In a small bowl, whisk together the buttermilk and egg. In another bowl, whisk together the flour, baking powder and salt. Stir the dry ingredients into the buttermilk mixture until blended and smooth.
In a medium cast-iron skillet, heat about 2 inches of oil to 375 F. A few at a time, dip the pickle chips into the batter and fry until golden brown, about 3 minutes. Set on paper towels to drain excess oil. Serve hot.

The season of comfort and joy is almost upon us. We take comfort in the warmth of our homes and joy in the festivities of the holidays.
It's been so quiet around my house lately that I'm truly ready for some laughter and joy. I do laugh at my self sometimes, and I laugh at some of the things I read or see on TV but you can't beat the company of good friends and family for sharing the joys of life.
I could go for a nice campfire about now. We surely do share a lot of laughter there. Before we know it that time will come again, but for now we'll be spreading some holiday cheer right here.
I'm thankful today that I have friends and family to share that joy with.
November is a time to enjoy others and be thankful for our blessings.

I am looking forward to some laughter and chat during the festive season Ma,as I am going away this year on holiday.The first Christmas away since I was married at the age of 21.So it will be nice to meet new friends and have lots of new company in the hotel.Smile and the world smiles with you.Nothing like a good laugh Ma you know me.Yes I laugh at myself too manys a time Heeeeeee.Like today when I searched for my specs at least half an hour,only to find when passing my lounge mirror, I was wearing them LOL!!! Hi Pam, we all need to destress, don't we? I have never seen so many stressed out people as I have lately. I think the world is just spinning too fast.

Woohoo, thanks girl. We had a weddin' here on the Ponderosa this weekend and I need a "Loosen up, Lighten Up Day!!!"
Now, I've revamped many of my 'fried' recipes to keep Dr. Whitecoat happy but I'm thinkin'...there's no substitute for a 'fried' pickle! Heeehehee!
