ON THE BRIGHT SIDE
JANUARY 9TH, 2010
It's SATURDAY…
Oh yes we did get some snow, but the weather was better than we had thought it would be and my nice neighbor was out with the snow blower before I even left for work yesterday morning. I was surprised how clear the roads were. The crews did a super job and all was clear going and coming home from work.
Today I am going to baby shower for DS#6 and his wife and after the shower we are doing a little family January Birthday celebration. Three of my grand’babes’ and my youngest son all have birthdays in January.
One of our January birthday people lives far away so won’t be here but I do send lots of birthday wishes her way for sure!

THINKING
Sometimes life is just like our changing weather. You just never know when the changes will occur. Sometimes something happens that we had no
idea was coming: sickness, job loss, accidents, or natural disasters.
Our emotional life also fluctuates from one extreme to the other. We can go
from joy to heartache in just a few moments
We all need something we can count on no matter what happens or how we
are feeling. There is something, someone, in fact, that you can count on to be
unfailingly consistent. Jesus was the same yesterday as he is today.
And he will be the same tomorrow.

NEW IN THE KITCHEN
I used to take my leftover mashed potatoes and make delicious potato pancakes, or latkes, for breakfast
3 lbs potatoes (grated or mashed)
2 eggs
1 teaspoon salt
3 tablespoons all-purpose flour or matzo meal
1/2 teaspoon baking powder
1 onion, minced
black pepper, to taste
paprika, to taste
vegetable oil (for frying)
Wash and peel the potatoes, then grate with a grater or food processor. Drain off all liquid, and squeeze the excess liquid out by hand. Or you can use your leftover mashed potatoes .
Beat the eggs and mix with the potatoes and other ingredients, except the oil. Heat about 1/2 inch of oil in a skillet over medium high heat until very hot. Drop potato mixture by heaping tablespoons into oil (about 4 at a time). Use a pancake turner to flatten them out. Fry to golden brown on both sides (about 3 minutes per side). Drain on paper towels. Serve topped with applesauce or sour cream.
If the mixture is too moist, add a little more flour
PRAYERS
Lord, give us each day the wisdom to recognize which things are important, and which things are not.
Amen
Please pray for God's protection of
our troops and HIS wisdom for their
commanders.
Lord, hold our troops in
your loving hands.
Protect them as they protect us.
Bless them and their families for the
selfless acts they perform for us
in our time of need. I ask this in the
name of Jesus, our Lord and Savior.
GOD BLESS YOU!

AROUND HOME
Last year we celebrated at DS#1’s house after we’d all taken part in the
Stroll for Epilepsy. We also had one February birthday to celebrate too.
Today will be a busy day what with a baby shower and birthdays to celebrate. It will be a fun time though and I’m very thankful that the weather is better than it was so everyone should be able to travel safely.
I should have lots more pictures to share tomorrow.
FAMILY ALBUM
