It's WEDNESDAY…
And HAPPY BIRTHDAY to our Princess and DS#6 today!

I did say there were many reasons to be celebrating this month didn’t I?
Lots and Lots of January birthdays in our family for sure! There is still one more coming too at the end of the month. I talked to DS#6 last night and got to wish him a happy birthday. His wonderful wife had made his favorite cake for his birthday.
The big news at my house this week is that I’m going to be a Grand’ma’ again. I’ve been expecting DS#6 and his wife’s new babe come March, but now DS#5 and his wife are expecting too. That will make #14 for me. There will never be a dull moment for me. As I’m retiring I can also do some babysitting!!! Since I’ve worked for so long I’ve not been able to do that and now I can look forward to it!

NEW IN THE KITCHEN
When my babes were young they used to love eating brownies, I know they still do too. One of my good neighbors at the time gave me this recipe for Texas Sheet Cake brownies. The recipe makes a cookie sheet full of rich, chocolate brownies
¼ cup cocoa
1 cup margarine
1 cup water
2 cups sugar
2 cups flour
2 beaten eggs
1 cup buttermilk
1 teaspoon Baking soda
1 teaspoon Vanilla
Frosting recipe follows
Preheat oven to 400 F. Grease and flour a 10x15x1-inch pan
In a medium saucepan, bring cocoa, margarine and water to a boil, stirring constantly, over medium heat.
In a large bowl, stir together the sugar and flour. Pour the cocoa mixture over and blend well. Add the eggs, buttermilk, baking soda and vanilla. Spread evenly in the prepared pan and bake for 20 minutes. Prepare the frosting.
When the cake is done, immediately pour the frosting over it and spread evenly.
Makes 20 servings.
Frosting: In a medium saucepan, bring to a boil 1/2 cup margarine, 1/4 cup cocoa and 6 tablespoons milk. Add 1 pound powdered sugar, 1 teaspoon vanilla and 1 cup chopped pecans. It is good without the pecans too, if you don’t want to add nuts.

AROUND HOME
I’ve been noticing that my front tires on the Silver Streak looked a little low on air and so yesterday when the weather was reasonably mild, not snowing and not raining, I stopped and checked them and put some more air in them. They were over 10 lbs low on air. Now my ride should be smoother. I did read that when it gets really cold that is one thing you should do and I’m glad I did.
The automatic starter that the babes got for the car at Christmas time has been used just about every morning since it was installed. It is nice to go out to a warm car when I leave for work each morning.

Ohh, retirement is looming. I wish!!! I have a few birthdays this month in my family as well. I do love me some Texas chocolate sheet cake. I have not made one in a long time. I love the chocolate one myself, but I'll have to make the white one as Todd is not a chocolate lover and it wouldn't be good for me to eat a whole cake all by myself.
