It's MONDAY!
And its Compliment Day. Today is a great opportunity to say something positive about the people you come into contact with. Everyone has good attributes. ...that's right....... everyone.
My Grandma always said: If you don't have anything nice to say, don't say anything. After a long search for something good, if you just can't find a compliment for them, then silence is golden
THINKING
We are all students of life and we can become so accustomed to what we already know and how we behave, that we do not want anything new. In His Word, Jesus is telling all that this is how He intends for us to live out His calling.
Look up at the Lord with gladness and smile; your face will never be ashamed.

NEW IN THE KITCHEN
Sharing another family favorite today
hash brown casserole
1/4 cup butter, plus more for dish
1 onion, chopped
1 (16-ounce) container sou
r cream
1 (10 1/2-ounce) can cream of celery soup
1 (8-ounce) package shredded Cheddar and Monterey Jack cheese blend
1/2 teaspoon garlic
powder
1 (30-ounce) package frozen shredded hash brown potatoes, thawed
1 teaspoon salt
1/2 teaspoon ground black pepper
2 cups crushed potato chips optional
Preheat oven to 350 degrees F. Lightly b
utter a casserol
e dish.
In a small skillet, melt 1/4 cup of butter over medium heat. Add onion, and cook 3 to 4 minutes, or until soft. Pour mixture into a large bo
wl. Add the sour cream, cream of celery soup, cheese, garlic powder, hash browns, and salt and pepper. Combine
until well b
lended.
Pour mixture into prepared baking dish. Top evenly with crushed potato chips and bake for 45 minutes, or until hot
and bubbly.
Servings: 8 to 10 servings

AROUND HOME
It is always fun doing something with someone you love and I’
m feeling the effects of being by myself far too much these days. Maybe that is why January is dragging on and on for me. I’m looking forward to more days w
hen I’ll have someone to do things with.
This time at home is not being wasted by any means as there is much to do here that often gets forgotten about once the weather gets nice and I start camping again. The nice thing about living alone is that I can take it all
at my pace and not have to worry about working around what others are doing.
I have so much to do that truthfully I probably won’t live long enough to do it all. But I certainly am trying.
FAMILY
You may have seen video of children in very poor countries laughing and playing, unconcerned that they should have more to be happy about. They
are happy because they are playing, because they have their friends and family, and some food to eat that day. Everyone has the right to be happy, and if they can be in their situation, shouldn't we?

We can't get the frozen hashbrowns here, so I always just use cooked chopped potato. One of my favourite potato casseroles! Compliment day eh? Well, here goes! I think you have one of the nicest and uplifting blogs I read, and that's no lie! xxoo
