It's MONDAY…
BACK TO WORK TODAY!
It was a quiet weekend and the only time I even left the house was to go to church on Sunday. It was pretty foggy here for a while yesterday. All this moisture in the air made conditions just right for it. It may be very foggy this morning too. We had a dense fog advisory till 4:00 this morning
It’s Martin Luther King Day and most schools, banks and the post office are all closed today. I have to work so the holiday doesn’t affect me at all.
THINKING
Taking time to rest and relax is important physically, emotionally and spiritually.
We can give thanks for peaceful moments with God. They renew us in mind, body and spirit.
Take my yoke upon you, and learn from me; for I am gentle and humble in heart, and you will find rest for your souls

NEW IN THE KITCHEN
Chicken Bacon Quesadilla
Refrigerated biscuits are used as a flaky, tasty replacement for tortillas in these chicken quesadilla
appetizers that are cooked on a contact grill.
1container (8 oz) sour cream
4green onions, thinly sliced (4 tablespoons)
1package (1 oz) ranch dip mix
1cup chunky-style salsa
1/4cup Peach Preserves
3tablespoons chopped fresh cilantro
1/4lb sliced roasted chicken (from deli), chopped
3/4cup shredded Mexican cheese blend or crumbled queso blanco cheese (3 oz)
8slices precooked bacon, chopped
1can (16.3 oz) refrigerated buttermilk biscuits (8 biscuits)
In small bowl, mix sour cream, 1 sliced green onion and 1 tablespoon of the ranch dip mix. In another small bowl, mix salsa, preserves and 1 tablespoon of the cilantro
Heat closed medium-size contact grill for 5 minutes; spray grill plates with No-Stick Cooking Spray. Meanwhile, in medium bowl, mix chicken, cheese, bacon and remaining green onions, cilantro and ranch dip mix
Separate dough into 8 biscuits; press or roll each into 5-inch round. Place 1/4 cup chicken mixture on one side of each biscuit round. Fold biscuit over filling; press edges to seal.
Place biscuits, two at a time, on grill; close grill. Cook 2 to 3 minutes or until golden brown. Cut each quesadilla into 3 wedges. Serve with sour cream and salsa mixtures

Protect them as they protect us.

selfless acts they perform for us
in our time of need. I ask this in the
name of Jesus, our Lord and Savior.

Please join me as I continue to pray today for all the victims of the earthquake, those left behind and for the different aid agencies trying to get food, medicine, water and essentials to the thousands who are in desperate need at this time.
AROUND HOME
Sunday was check in time for most of my family
I talked with DS#2 on Sunday. He’d just got back from a trip for work and now won’t have to be traveling again until sometime in March. Part of the trip he was supposed to be going on was cancelled. He said the temps were pretty chilly there too, but they’ve had no snow.
DS#4 called and he is traveling for work once more this week. His work involves a lot of trips so I’ll be praying for safe trips for him for quite awhile it seems. One good thing is that soon one of his trips will be a relaxing one as they’ll be able to have a week of vacation time.
DS#5 was at church Sunday morning and DD had company so she didn’t make it but she called to check in later in the day. DS#1 called later in the evening too to do his weekly check in. All is well at their house.
I’m always happy to hear from any of my children. I love to know what’s going on with them and their children too.
FAMILY
A boy, entirely frustrated with all the rules he had to follow, approached his father and asked, Dad, how soon will I be old enough to do as I please?
His father answered immediately,
I just don't know, son. No man has ever lived that long yet

I like the idea of a "check in" day. Hope you have a good week.
I like the idea of a check in day as well. I wonder if my kids would cotton on to that one! I hope your son will be safe in his travels this week. Those quesadillas sound fabulously tempting! I love anything Mexican! Have a wonderful Monday and don't work too hard! xxoo
