It's FINALLY FRIDAY…
The boss hasn’t said much about my retirement since I let him know on Monday. He did ask if I’d extend my time by one week as he’ll be on vacation at that time so I told him I would. What’s one more week after so many years. I’m leaving the countdown as it is anyway…I really will be retired by then just filling in for a week longer.
I can hardly believe it myself. Working has been a part of my life since I was 16 years old and I baby sat for many years before that. I did have a break from working outside the home for a few years when my children were young, but the rest of the time I’ve worked.
Yesterday is a canceled check; tomorrow is a promissory note; today is the only cash you have. Spend it wisely

When there are days in my life that seem cloudy and dark, whatever my challenge or sorrow, I know there is a place where God's light never ceases to shine and where there is no darkness. I can go to that place with prayer. God's presence is always with me. There is no darkness that can withstand the light of God.

Comfort foods are familiar, simple foods that are usually home-cooked or eaten at informal restaurants. They are foods that are often emotionally significant to a person or group of people and are sometimes related to pleasant memories of childhood.
Comfort food is typically inexpensive, uncomplicated, and easy to prepare. Many people eat comfort food because it is generally easily digestible, is tasty and flavorful
The term comfort food was added to the Webster's Dictionary in 1972
One of those comfort foods here in the US is Southern Style Chicken and Dumplings
I found this recipe that seemed pretty simple to do
You will need: 3 or 4 Cooked chicken breasts, 1 can of Pillsbury flaky layers biscuits, flour (self rising or plain, doesn’t matter), chicken broth, and cream of chicken soup.
Cook chicken breasts in approx. 4 c. of water until fork tender, about 45 minutes.
Feel free to drop a few chicken bouillon cubes into your water in place of the broth
Or pour your broth into a pot.
Add cream of chicken soup.
Stir and let come to a very gentle boil while you prepare the dumplings.
Put a little bit of flour, about a cup, in a bowl.
Add some pepper. I added about a teaspoon.
Salt it. I added about a half a teaspoon
Stir that up a bit
Take all of your biscuits out of the can and set them on a plate.
take each biscuit and tear it into three layers
Dip each layer into your flour
Making sure you coat both sides…if you don’t do this your dumplings will completely dissolve in the broth
Now take each layer and tear it into three pieces…and drop into gently boiling broth mixture. Do not stir biscuits a lot, or they will cook up, only gently push dumplings down into broth as they float to the top. Cook about ten minutes after last dumplings are added. Add shredded chicken and turn on low until ready to serve. added, Tear up chicken, add to broth mixture. Turn to low until ready to serve.
One thing I would do because I like vegetables in my Chicken and Dumplings would be to add a can of VegAll mixed vegetables that has been drained.

I hope you all got to enjoy at least 2 days of sunshine this week where you are. We had 2 wonderfully bright days. When I looked at the long range forecast though there was nothing but clouds for at least a week now. So those sunny days will become nothing but a memory.
My weekend will not be very exciting but it will be nice as there is nothing extra to do on the calendar. I’ll just be doing the house blessing and the laundry. They need some TLC too as last weekend not much was accomplished here at home.
I think I’ve mentioned before that I do love ordinary days.

Working an extra one week isn't too bad Ma like you say.You have worked hard all your life,I think bringing up your children was hard enough without having other jobs.Your dumplings sound so much differant from what we make here in the UK.The recipe sounds yummy even so.There is always light after dark I say.Have a lovely weekend,I hope you get a little more of that sunshine you had this week, even if it isn't predicted and a few smiles along the way.Take Care God Bless Kath xx
