Life is a special occasion!
Today is National Lasagna Day which celebrates a delicious Italian Dish that has dozens of variations. Some popular additions are meat, vegetables and Bechamel sauce.
People have been eating noodles for at least 4,000 years, but disagree over when and where the first pasta dish originated.
Tomatoes are a New World food, which means pasta and tomato dishes like lasagna have only been around since the 16th century.
Celebrate today and bake a big pan of lasagna to share with family and friends.

Lasagna is a dish that I usually make on Christmas Eve. Everyone loves it, but it’s something I only fix once a year. I like to add Italian sausage to mine. I buy the bulk sausage and brown it up and add to the tomato sauce. Some like to use ground beef but I like the flavor of the Italian sausage best.
It wasn’t something we had when I was growing up, but after I married I discovered the recipe in my cook book and everyone loved it. I’ve made it for several family get togethers since then and passed on the recipe many times.
I’ve found that as long as I’m making one lasagna, it’s easy to make two and put the 2nd one in the freezer to enjoy later on. It freezes well and it’s nice to have something on hand that all you have to do is heat it up for a delicious meal.
DSIL’s cousin and her family’s flight home yesterday got cancelled and they had to find a different flight back home several hours later. They went through a terrible wait, not knowing when they’d get home. Hopefully, this morning they are there and enjoying the comforts of their home.
Today is another partly cloudy morning here. We had lots of rain yesterday, so I’ m hoping for some sunshine today. It would be nice to enjoy some time in the pool.

When I told my husband it was lasagna day, and he got really happy.
I like lasagna, but I don't love it. lol.
