My favorite way to make fried chicken is to do it in the oven. It’s easy and with my large family it saved a lot of time. It’s also a healthier way to fix it. Oven fried chicken is delicious! I also enjoy KFC. It’s easier to get a bucket of chicken and bring home with you than to try and fix it for yourself.
But for today, I’ll not be having chicken, but instead on the menu for today is:
Texas Chili Fries
Makes 16 servings
1 onion chopped
1 carrot, finely chopped
2 pounds beef stew meat, cut into 1/2 inch pieces
3 Tbsp. all purpose flour, divided
2 Tbsp vegetable oil
1 can, 14.5 oz., Mexican diced tomatoes
1 envelope chili seasoning mix
1 can, 15 oz., pinto beans rinsed and drained
1 green oepper chopped
1 jalapeno pepper, seeded and finely chopped
2 pkgs, 32 oz. each, frozen french fried potatoes
2 cups shredded cheddar cheese
Optional toppings: Sour cream and sliced jalapeño peppers.
Place onion and carrot in a slow cooker. Toss beef with 2 Tbsp. flour. In a dutch oven, heat oil over medium heat, brown beef in batches and transfer meat to slow cooker.
Drain tomatoes, reserving liquid in a small bowl, whisk drained liquid, chili seasoning and remaining flour until all blended; pour over beef. Stir in tomatoes, beans and peppers. Cook covered on low about 6 hours or until meat is tender.
Prepare fries according to package directions. Serve chili over fries , sprinkle with cheese. If desired top with sour cream and jalapeño slices.
This is a large recipe so I’ll definitely be cutting this in half and still will have plenty leftover.
I’m going to be taking the easy way out today and will use a can of chili that I have on hand instead of making my own. I have to go shopping today so won’t have much time to cook. As usual I made up a menu for next week to make my shopping list from and on the menu for next week is:
Monday - Chopped Power Salad with Chicken
Wednesday - Ground Beef and Pasta Skillet
Friday - Mozzarella, Basil and Zucchini Frittata
Weekend - Applesauce Barbecue Chicken
I lucked out today and there is only a slight chance of showers later on today so it looks like it will be ok to get out and about.
We’ll be in the low 80’s so it should be a great day!

Not Fried, but we are having chicken today, I just put it in the slow cooker. But raised in a preacher's home I hate a lot of chicken. Mama did the BEST! He fried chicken was known in church circles especially at home comings. Sherry says mama's was the best and she is the BEST judge.

Yes, great minds on National Fried Chicken Day! I've never tried making it; terrified of not getting it fully done. Pretty sure Tom still has some left-over in the fridge; I really should take a bite to say I observed the day.
