The only time I got to spend anywhere near cowboys was when I visited DS#2 in Texas. They took me to a park that had lots of statues of cowboys and cattle. They were beautiful bronze statues that were more than life-size and it was an experience to see them. That is what the pictures are of today.
Cattle drives were a lot of hard work over miles and miles of dusty trails. This was supposed to be a representation of one.
It’s my day to cook here and I found the perfect recipe for today.
Cowboy Casserole
Makes 2 servings
1/2 lb. lean ground beef
1 can whole kernel corn, drained
2/3 cup condensed cream of chicken soup, undiluted
1/2 cup shredded cheddar cheese, divided
1/3 cup milk
2 tbsp. sour cream
3/4 tsp. onion powder
1/4 tsp. pepper
2cups frozen tater tots
Preheat oven to 375 degrees. In a large skillet cook beef over medium heat until no longer pink. Stir in corn, soup, 1/4 cup cheese, milk sour cream, onion powder and pepper
Place 1 cup Tater Tots in a greased baking dish. Layer with beef mixture and remaining Tater Tots sprinkle with remaining cheese. Bake uncovered until bubbly, about 25 minutes.
Since I’m not at home, however, I won’t be cooking this today, but will try to finish off some of the sausage gravy and biscuits that I found in the refrigerator.

Thanks to my children I've got to see a lot when I travel to visit them.
When I was a little girl, my fondest aspiration was to be a cowgirl ... my fictional heroes Roy Rogers, Gene Autry. Oh, and the TV series Skip and Marty.
Like their farmer counterparts, there's is sure not an easy job. Like Willie Nelson sings, "My heroes have always been cowboys."
Oops. That should be, "Spin and Marty."
