THOUGHT FOR TODAY
I used to love to walk, these days, not so much. Now most of my walking is done in the grocery store. Holding on to the shopping cart makes it easier for me. As today is my grocery shopping day, I’ll be sure to celebrate.
Wednesdays are not only a day for me to cook something new, it’s the day I make up my menu for next week to do my shopping from.
On the menu today is:
Cheesy Meatball Casserole
Makes 8 servings
16 oz. fusilli pasta
1 24 oz jar marina sauce, divided
1 lb lean ground beef
1/2 cup breadcrumbs
1/4 cup grated sweet onion
1/4 chopped fresh basil, plus more for garnish
1 large egg
2 tsp Italian seasoning
1/2 tsp.salt
1/2 tsp crush red pepper
2 cups shredded mozarella cheese
Preheat oven to 350 degrees. Bring a large pot of water to a boil and add pasta and cool until the center of the pasta is somewhat firm, less than the package instructions. Drain the pasta and transfer to a baking dish. Add half of marinara sauce and stir to coat.
Combine beef, breadcrumbs, onion, basil, egg, Italian seasoning, salt and crushed red pepper in a large bowl; gently mix with your hands. Form the mixture into 16 1 1/2 inch meatballs, nestling the pasta mixture as you work. Pour the remaining sauce over the casserole and top with cheese.
Bake until a thermometer inserted into the meatballs registers at least 160 degrees, about 40 minutes. Garnish with basil if desired
This is a large recipe so I’ll be cutting it in half today. I have frozen meatballs on hand so I will be using those, not making my own. I always keep some on hand in the freezer. It saves a lot of time and these are good ones.

Monday- Chicken Parmesan Burgers
Wednesday - Easy Taco Pizza
Friday - Shrimp and Crab Casserole
Weekend - Smoked Paprika Chicken
I’m supposed to be going to a birthday party today for our little Precious One. It’s not her birthday, but a day when everyone had time to get together to celebrate her special day. Usually we have parties on the weekend, but everyone was already busy, so since school is not in yet, today is the day. We all have such busy lives, we try to make do when we can.
I’m not sure how much walking I’ll do but there will be a lot of driving involved. I’ll be catching a ride with either my son or daughter that live here in town. They always have room for one more in their cars.

Walking is such good exercise and it clears your mind.
Here people walk in the mall. They open it up early just so people can walk before the stores open since it is usually already 80 and above. Hope you enjoy the birthday.
What a cute term, taking your pants for a walk! Here, too, it's far too warm and humid to walk further than what is absolutely necessary. We've no shopping malls nearby, but I think Target has folks who walk early in the morning ... that's the best part of the day, after all.

Good pictures my friend. We love to walk when we get the chance. Hope to do more as time passes and we get thru this project. LOL Good stuff, and We are TIRED! for sure....
