THOUGHT FOR TODAY
July is hot afternoons and sultry nights and mornings when its joy just to be alive. July is a picnic and a red canoe and a sunburned neck and a softball game and ice tinkling in a tall glass. July is a blind date with summer.

Except for a blog friend, I really don’t know anyone who lives in Canada and I’ve only ever visited there one time when we rented a cabin with friends in order to go fishing with them. That was years and years ago before we even had any children.
I got to see Niagra Falls on both sides, in the U.S and in Canada. What a beautiful sight !
It’s my day to cook. On the menu for dinner tonight is
Creamy Broccoli Pasta
Makes 4 servings
8 oz. cavatappi or rotini pasta
2 Tbsp olive oil
1/2 cup halved and sliced onion
2 cups chopped broccoli
1/2 tsp salt
1/4 tsp crushed red pepper
1/2 cup mascarpone cheese
1/4 cup plain Greek yogurt
1 tsp. garlic powder
Grated Parmesan cheese, optional
Bring a large saucepan of water to boil. Add pasta and cook according to package directions. Reserve 1/2 cup of the cooking water . Drain pasta and return to pot.
Meanwhile heat oil in a large skillet over medium high heat. Add onion and cook stirring for 1 minute. Add broccoli and crushed red pepper, cook stirring until vegetables are soft. Remove from heat.
Whisk mascarpone, yogurt, garlic powder and reserved pasta water together in a small bowl. Add to the pasta along with broccoli mixture. Stir well to coat. Cover and let stand for 5 minutes before serving . Sprinkle with Parmesan cheese if desired.
I don’t have mascarpone cheese so will be using softened cream cheese instead.
It’s supposed to be a hot and steamy day with temps in the 90’s today so I think I’ll stay in and keep cool. It’s too hot to go out for me. However, I do have a prescription to pick up, so I’ll be making a short trip to the drug store.

Take it easy in the heat, it's ok to be lazy when it gets hot out.
Whew, I'll always be grateful to whomever invented the air conditioner! What fun factoids about those things which originated in Canada.
I hope your pasta's as delicious as it sounds!
