I’ve got to admire a man who did as much for humanity as Nelson Mandela did, so I will be celebrating this day. When we do good for others we cannot go wrong. And a little kindness goes a long way.
My kindness today extends to DS#5 and family by watching over their home and all their critters while they are gone this week. I’m to be there at 10 am which is quite a feat for me as I’m rarely even dressed before noon. I like to take my time waking up and enjoy several cups of coffee before doing much at all.
There is not much I can do much these days, but I’m good at sitting and keeping an eye on the house.
And I will thoroughly enjoy the critters. They have 2 dogs and 4 cats to keep me company.
They said they will leave me instructions on what needs to be done. So I’ll know how much food to give them and when.
I’ve got everything I’ll need this week packed and ready to go. I’m even taking a few food stuffs that I know I should be using up this week. Included is bananas, bread and meat that is not frozen and won’t keep.
It’s usually my day to cook something new and on the menu is:
Chicken Club Wraps
Makes 4 servings
1 lb. boneless skinless chicken breast
1/2 tsp. freshly ground pepper, divided
3 Tbsp. plain Greek yogurt
3 Tbsp. cider vinegar
3 Tbsp. minced onion
2 Tbsp. olive oil
1/8 tsp. salt
1 medium tomato, chopped
1 avocado, chopped
3 strips cooked bacon, crumbled
8 large leaves of green leaf lettuce
4 10 inch tortillas, preferably whole wheat
Preheat a grill to medium high. Sprinkle chicken on both sides with 1/4 tsp pepper. Oil the grill rack. Grill the chicken, turning once or twice until and instant read thermometer reads 165 degrees, about 18 minutes. Transfer to a cutting board and let cool about 5 minutes.
Meanwhile, whisk yogurt, vinegar, onion, oil, salt and remaining pepper in a large bowl. Chop the chicken into bite size pieces and add to bowl along with tomato, and bacon. Toss to combine.
To assemble wraps, place 2 lettuce leaves on each tortilla and top with chicken salad . Roll up like a burrito. Serve cut in half, if desired.
This will give me plenty of leftover to have for lunch the next few days.

I'm not used to rushing in the morning. I like to take it slow and easy.
I am so glad to see this, Nelson Mandela day. For some reason I did not know that existed, but I do think it is WELL DESERVED. THANKS. Now that short Scripture: Enter into His courts with thanksgiving (Praise),.... That was part of our memory lessons in the 3rd grade of public school. I still rememberit.....
